The Recipe Instructions
 

 

Ingredients

2 tbsp butter
2 tbsp finely-minced/chopped onion
8 oz mushrooms, finely chopped
= (wild mushrooms if possible)
8 tbsp cooked spinach
Salt, to taste
Freshly-ground black pepper, to taste
2 tsp chopped chervil
8 chicken breasts
Butter, as needed
=== SAUCE ===
1 tbsp butter
1 tbsp finely-minced onion or shallots
1/2 pt chicken stock
1/4 cup dry white wine
5 mushrooms, chopped
1 pt heavy cream
Salt, to taste
Freshly-ground black pepper, to taste


Directions

Melt the butter in a pan and sauté the shallots or onion until softened.
Add the mushrooms and cook for 2 minutes. Stir in the cooked spinach,
season to taste with salt and pepper and add the chervil.

With a sharp knife, cut a lengthways pocket in each of the chicken breasts
and fill it with the prepared stuffing. Lightly butter the breasts and
wrap them in separate pieces of foil to form loose but secure parcels.
Place on a baking tray and bake, 350 degrees for 15 to 20 minutes.

To make the sauce, melt the butter in a pan and sauté the shallots or
onion. Add the stock, wine and mushrooms and boil rapidly to reduce by
three-quarters. Add the cream and cook for a minute or two longer to allow
the sauce to thicken slightly. The sauce should have a thin coating
consistency. Season to taste with salt and pepper.

Unwrap the foil parcels, lift the chicken breasts on to warmed plates and
pour over the sauce.

This recipe yields 8 servings; 4 carb grams per serving.

The South Beach Diet
The South Beach diet is a diet started by Dr. arthur agatston, a cardiologist from miami, usa, which encourages that one should eat "good carbs" instead of "bad carbs" and "good fats" instead of "bad fats"
Agatston developed his weight loss regime for his cardiac patients, as a consequence of his detailed analysis of scientific data on other nutritional studies.
"good" foods include, broiled ham, chicken breast, clams, feta cheese, almonds, lowfat milk and certain vegetables, such as black beans, collard greens and turnips.


The Atkins’ Diet
First invented by doctor atkins in the sixities, the atkins diet is still widely used today. Having many well known film stars amongst its supporters, it enables fat reduction whilst allowing foods that are normally considered bad for diets, for example fatty meat and eggs.
Unlike other diets, with the atkins diet it is considered good to eat fat and protein, avoiding carbohydrates almost completely. Because of this, it is known as a low carb/high protein, nutrition and weight loss system.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
On the atkins diet the foods you are encouraged to eat are still nutrient-rich unprocessed foods such as meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter and, as a result, olive oil.

The theory of the popular atkins diet is that if we reduce your intake of carbs, we will consume our fat and we will reduce weight




The Glycaemic Index Diet
The gi index nutrition and weight loss system is linked to the gi (or glycaemic index), a list of food types and an indicator of the ease with which the energy of the food gets changed to glucose in the dieters bloodstream. The theory is that long-acting foods (ie those foods with a low Gi number), keep you satisfied for a longer period of time and help to cut down on food without starving yourself.
It's also extremely beneficial for people with diabetes, as the low GI food types are helpful in minimizing increases in blood sugar levels.
