The Recipe Instructions

Ingredients

1 each egg white, room temperature
2 tsp granulated sugar
1 each serving non-stick spray(pam)
1 tsp powdered sugar, divided
1/8 tsp white vinegar
1/8 tsp vanilla extract
1/2 cup fresh strawberries or kiwi
1 tbsp whipped topping

Directions

Use a shallow rectangular baking dish, approximately 6 by 8 inches.
Spray with non-stick butter flavored cooking spray. Line with wax
paper cut to fit. Spray again with Pam, dust lightly with 1/2 of the
powdered sugar. Set aside. Whip egg white until firm peaks form. Add
sugar, vinegar and vanilla and whip until stiff peaks form, about 30
seconds to 1 minute more. Spread evenly in baking dish, and cook in
microwave oven for 1 1/2 to 2 minutes on high. The meringue will
stretch and spread while baking, but will shrink back to proper size
while cooling, so don't panic! Cool meringue, and turn out onto wax
paper that has been lightly dusted with the remaining powdered sugar.
Spread with the tablespoon of whipped topping, top with the fruit and
gently roll up. Garnish with small piece of fruit and mint leaves.

Servings: 1

Lycopene superfoods
(includes grapefruit, red bell peppers & tomatoes)

The phytochemical lycopene is a natural coloring agent and member of the same family of phytochemicals as carotene. This chemical is responsible for the deep red hue of some fruits and vegetables.

Unlike many other vitamins, this useful phytochemical is not damaged during the cooking process, but is genuinely strengthened by being heated.

. Its key health contribution is that it is an antioxidant and seems to be an asset in the battle to lower the chances of developing cancer.

It is the most efficacious eliminator of singlet oxygen, which is linked with skin aging. It's also thought by many researchers to block the progression of atherosclerosis.

The Atkins’ Diet
Originating way back in the 1960s, the atkins diet is still one of the most popular diets today. Having many well known film stars amongst its supporters, it supposedly allows fat reduction whilst allowing many foods that are not normally available to dieters, such as bacon and egg and cheese.
Unlike other diets, on the atkins diet it is considered good to eat fat and protein, it is the carbs that must be avoided. It is referred to as a low carbohydrate, high protein, diet system.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, amongst them, cereals and pasta made from white flour.
With this diet the foods you are encouraged to eat are nutrient-rich unprocessed foods such as meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil.

The Atkins’ Diet Theory
The 'science' behind the atkins diet is that even though our bodies use both fats and carbs to burn into glucose and energy, it is the carbs that are burned primarily. If we eat less carbohydrates, we will burn up our fat and we will lose weight. Although inviting, this theory is controversial, not all experts accept this as true and some think it is sometimes risky.

"A good cook is the peculiar gift of the gods. He must be a perfect creature from the brain to the palate, from the palate to the finger's end.
"Walter Savage Landor"

"A diet is the penalty we pay for exceeding the feed limit."

"Reality check: you can never, ever, use weight loss to solve problems that are not related to your weight. At your goal weight or not, you still have to live with yourself and deal with your problems. You will still have the same husband, the same job, the same kids, and the same life. Losing weight is not a cure for life"
