Foods containing lycopene (includes grapefruit, red bell peppers & tomatoes) The phytochemical lycopene is a simple coloring agent and member of the same group of phytochemicals as carotene. Lycopene is responsible for the red colour of quite a few fruit and vegetables. Unlike numerous other nutritional compounds, lycopene not only survives being cooked, but is actually improved by going through the cooking process. . Its main theraputic value is that it acts as an antioxidant and appears to be an asset in the fight to lower the risk of contracting cancer.
