Ingredients

6 boneless skinless chicken breast ha
Salt, to taste
Freshly-ground black pepper, to taste
1 cup Fiber One cereal
1 tbsp olive oil
1 cup sliced unpeeled zucchini
1 cup cubed unpeeled eggplant
1/2 cup roasted red bell peppers in 1/2" st
= (from a 7-oz jar)
1/2 medium red onion, sliced, and
separated into rings
1 large garlic clove, finely chopped
1 tbsp olive oil
2 tbsp water
2 tsp lime juice
3 cup cooked couscous - (1 cup uncooked)


Directions

Heat oven to 375 degrees. Spray rectangular baking dish, 13 by 9 by 2
inches, with cooking spray. Rinse chicken; pat dry. Sprinkle with salt
and pepper. Crush cereal. (Place cereal in plastic bag or between sheets
of waxed paper; crush with rolling pin. Or crush in blender or food
processor.) Place cereal in shallow dish; coat chicken completely with
cereal.

Heat chicken in 1 tablespoon oil in 10-inch skillet over medium heat 15
minutes, turning once, until juice is no longer pink when centers of
thickest pieces are cut. Remove chicken from skillet; cover to keep warm.

In same skillet, cook zucchini, eggplant, bell peppers, onion and garlic in
1 tablespoon oil 3 minutes, stirring occasionally. Stir in water and lime
juice; cook about 1 minute or until hot.

Place couscous in baking dish. Place chicken breasts on couscous. Pour
zucchini mixture over chicken. Bake about 10 minutes or until hot.

This recipe yields 6 servings. Serving size: 1/6 recipe.

The Zone Diet
The Zone diet is a nutrition system primarily suggested by Barry Sears in a series of books, publications and an associated website. The Zone diet is not exactly a fat reduction diet, nevertheless many people claim that they really reduce body weight when following it.
The main theory behind the Zone Diet is that if one can limit the secretion of insulin and glucogen (both hormones), then your body releases eicosanoids (anti-inflamatory chemicals) which, as a result puts one's body in a state of equilibrium which is more healthy than normal, which followers of the diet, refer to as '"he zone".
Sears claims that if you get into this 'zone', your body is working at its most efficient and, as a consequence, does not need to build up stores of fat.
The most important method of the zone system is to monitor and control the exact ratio of carbohydrates to proteins, and to dose yourself with high levels of Omega 6 and omega 3 fish oils.


The South Beach Diet
The South Beach diet is a diet started by Miami, florida-area cardiologist arthur agatston which encourages that one should eat "good carbs" instead of "bad carbs" and "good fats" instead of "bad fats"
Agatston developed his nutritional system as an aid to patients with heart conditions, as a result of his detailed study of scientific studies on other weight loss studies.
"good" foods include, canadian bacon, turkey breast, oysters, feta cheese, almonds, lowfat milk and certain vegetables, such as black beans, cabbage and mushrooms.


The Glycaemic Index Diet
The gi (or glycaemic index) nutrition and weight loss system is reliant on the glycaemic index, a list showing types of food and a score representing the rapidity with which the carbohydrates in the food gets changed to glucose in the dieters system. The claim is that long-acting types of food (ie those foods with a low Glycaemic score), suppress your appetite and help to cut down on food without craving snacks all the time.
It's also beneficial for diabetes sufferers, as the low GI types of food are helpful in managing rises in glucose secretion.


The Atkins’ Diet
Developed by dr. robert atkins in the 1960s, the atkins diet is still one of the most popular diets today. Having many well known film stars amongst its supporters, it claims to allow weight reduction but still allows you to eat many foods that would not be part of a normal diet, like bacon and egg and cheese.
Unlike other diets, with the atkins diet you are supposed to eat fat and protein, avoiding carbohydrates almost completely. It is often referred to as a high protein, low carb, nutrition system.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
On the atkins diet the foods you are encouraged to eat are nutrient-rich unprocessed foods such as meat, fish and, as a result, poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil.
