Ingredients
3 tbsp fresh lime juice
2 tbsp soy sauce
1 tsp garlic, minced
1 tsp jalapeno chili, minced
1/2 tsp lime peel, grated
1/2 tsp fresh ginger, grated
4 boneless chicken breasts, skinned (about 1 lb), cut
1 tsp cornstarch
2 tbsp vegetable oil, divided
2 medium zucchini, julienned
1/2 red pepper julienned
1/2 yellow pepper, julienned
1/4 tsp salt
1/4 tsp freshly ground pepper
Directions
Combine the lime juice, soy sauce, garlic, jalapeno, lime peel, and
ginger in a large glass bowl. Add the chicken, then cornstarch and
toss to coat. Cover and refrigerate 1 hour.
Heat 1 tablespoon of the oil in a large skillet or wok over
medium-high heat. Add the zucchini, red and yellow pepper, salt, and
pepper. Stir-fry until tender-crisp, about 2 minutes. Transfer to a
plate.
Heat remaining 1 tablespoon oil in the same skillet. Add chicken.
Stir-fry until opaque and firm to the touch, about 3 to 5 minutes.
Return vegetables to skillet; cook, stirring, until heated through,
for 30 seconds more. Makes 4 servings.

The low-cal diet
Rather obviously, low calorie diet depends on the fact that if you want to reduce weight, the most important step is to take in less calories than you actually use. So what is a calorie? The calorie is the standard unit for energy measurement in dieting. The food calorie is the the amount of energy required to raise the temperature of one gram of water by one degree celsius. If a meal contains more calories, then it will turn into a larger amount of energy when eaten. Examples of low calorie foods include cauliflower, radishes, water melon, lean ham, and bamboo shoots. The Glycaemic Index Diet The glycaemic index diet system is reliant on the gi (or glycaemic index), a chart showing food types and a score illustrating the ease that the energy in the food type gets transformed to glucose in the dieters body. The believe is that slow acting foods (ie with a low Gi score), keep you satisfied for a longer period of time and help you to consume less food without starving yourself. It is also extremely effective for people with diabetes, as the low GI foods are beneficial in minimizing rises in glucose secretion. Carotenoid foods (includes paprika, turnip greens and winter squash) These amazing vegetables and fruits are rich in alpha and beta carotenes believed by many be a key nutrient in cancer prevention, spefically cancer of the lung, esophagus and stomach. The majority of these are low in calories, so should be included in your weight loss regime. |
