Ingredients
1 (3 1/2-lb) chicken, cut up
2 unpeeled zucchini *
2 large carrots, peeled *
2 potatoes, peeled *
1 large stalk celery *
2 sprigs parsley
1 sprig tarragon
1 bay leaf
1 salt (optional)
WINE SAUCE
1 cup dry white wine
1 shallot, minced
1 tbsp margarine
1 cup chicken stock
1 pepper
Directions
*Note: Zucchini, carrots, potatoes and celery should be thickly sliced
diagonally. Place chicken pieces on steamer rack. Top with zucchini,
carrots, potatoes, celery, parsley, tarragon and bay leaf. Season to
taste with salt. Cover and steam over hot water 45 minutes, or until
chicken and vegetables are tender. To make sauce, boil wine until
reduced by half. In another saucepan, saute shallot in margarine
until tender. Add wine and stock and cook until reduced by one-third.
Season to taste with pepper. Serve chicken in soup bowls with pan
liquids and pass sauce on side.

The South Beach Diet The South Beach diet is a diet created by Cardiologist arthur agatston which stresses that dieters should eat "good carbohydrates" instead of "bad carbohydrates" and "good fats" instead of "bad fats" Doctor agatston developed his weight loss regime for people who have heart disease, based on his detailed study of scientific studies on other diets. Approved foods include, broiled ham, chicken breast, prawns, parmesan cheese, peanut butter, lowfat or nonfat milk and some vegatables, such as asparagus, celery and turnips. Foods containing allyl sulfides ( includes garlic, white onions and welsh onion) The onion range of vegetables is rich in allyl sulfides, a chemical which experts believe could be linked to a reduced risk of stomach and colon cancer. Although there is little real proof at hand, allyl sulphides are also thought by many researchers to reduce problems with antiinflammatory effect, sterilization and physical exhaustion. Foods containing allyl sulfides are also good for weight loss, so should be a part of every diet. |
