Ingredients
3/4 cup Fiber One cereal
1 3/4 cup Gold Medal all-purpose flour
1 cup brown sugar
1 cup applesauce
1/2 cup milk
1/4 cup vegetable oil
3 tsp baking powder
3/4 tsp apple pie spice
1/2 tsp salt
1 egg
1/2 cup raisins
Directions
Heat oven to 350 degrees. Grease bottom only of loaf pan, 9 by 5 by 3
inches. Crush cereal if desired. (Place cereal in plastic bag or between
sheets of waxed paper; crush with rolling pin. Or crush in blender or food
processor.)
Stir together all ingredients except raisins in large bowl; beat 30 seconds
using spoon or mixer. Stir in raisins. Pour into pan.
Bake 55 to 65 minutes or until toothpick inserted in center comes out
clean. Cool 10 minutes; remove from pan. Cool completely before slicing.
This recipe yields 24 servings. Serving size: 1 slice.

The Glycaemic Index Diet
The gi index diet is linked to the gi (or glycaemic index), a chart showing foods and a score representing the rapidity that the carbs of the food type gets changed to sugar in the dieters body. The believe is that slow acting types of food (ie those foods with a low Glycaemic score), keep you feeling full longer and mean that you can take in less food without feeling you are always hungry. It is also beneficial for people with diabetes, as the low GI foods are helpful in managing rises in blood glucose secretion. Lycopene foods (includes watermelon, papaya & tomato) Lycopene is a naturally occurring compound and a member of the carotenid family of phytochemicals. It is accountable for the red color of some food types. Usefully, unlike many other healthy agents, it is not damaged if it is cooked, but is in fact strengthened by being heated. . Lycoprene's most valuable value is that it behaves as an antioxidant and appears to be of use in the fight to lower the probabilty of cancer. It is the strongest eliminator of singlet oxygen, which is associated with aging of the skin. It's also believed to block the development of atherosclerosis. |
