Ingredients
4 duck breasts, skin on
1/2 tsp salt
1 tsp freshly-ground black pepper
1 tbsp olive oil
1/2 pt fresh raspberries, pureed, and
strained of seeds
1/2 lemon, juiced
Directions
Preheat the oven to 375 degrees.
Season the duck breasts with the salt and pepper. Heat the olive oil in a
pan over medium-high heat. Add the duck breasts, skin down, to the pan and
allow the skin to sear to a golden brown, about 6 to 8 minutes. Turn the
duck breasts over and sear remaining side to golden brown, about 2 to 4
minutes.
Brush each duck breast with the raspberry puree. Bake the duck breasts in
the oven for about 10 to 15 minutes, or until they reach an internal
temperature of 165 degrees. Be sure to brush the breasts with the
raspberry puree every 5 minutes.
Serve each duck breast brushed with the raspberry puree and sprinkled with
lemon juice.
This recipe yields 4 servings. Serving size: 1 duck breast.

The Atkins’ Diet
Now nearly 5 decades old, the atkins diet achieved most of its fame during the last few years. Popular with many famous celebrities, it claims to allow weight loss whilst allowing you to eat foods that are normally considered bad for diets, like pork and cheeses. Unlike other diets, on the atkins diet it is considered good to eat fat and protein, it is the carbs that must be avoided. It is referred to as a high protein, low carb, diet. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, amongst them, cereals and pasta made from white flour. On the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods like meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil. The Atkins’ Diet Theory The logic behind the atkins diet is that if we injest less carbs, we will utilise our stored fat and we will get rid of some fat The South Beach Diet The South Beach diet is a diet created by Florida-based cardiologist arthur agatston which emphasizes that dieters should eat "good carbohydrates" instead of "bad carbs" and "good fats" instead of "bad fats" Agatston invented his nutritional system for people who have heart disease, as a consequence of his detailed analysis of scientific studies on other nutritional studies. Examples of good foods include, veal cutlets, skinless poultry, clams, parmesan cheese, pistachios, lowfat or nonfat milk and certain vegetables, such as artichokes, celery and water chestnuts. Superfoods containing carotenes (includes parsley, collard greens and tomato puree) These foods contain alpha-carotene and beta-carotene thought by doctors be a key nutrient in helping stop cancer, particularly those cancers involving the lung, esophagus and stomach. The majority of these are also good for weight loss, so should be a part of every diet system. |
