Ingredients
1 tbsp dried rosemary leaves, crushed
3 garlic cloves, pushed through press
3/4 tsp salt
1/4 tsp freshly-ground black pepper
6 lb beef rib roast - (to 7), well trimmed
= (small end - 3 to 4 ribs)
Directions
Heat oven to 350 degrees.
Combine rosemary, garlic, salt and pepper in a bowl; press evenly into
surface of beef. Arrange roast, fat-side up, in a shallow roasting pan.
Insert ovenproof meat thermometer so tip is centered in thickest part of
beef, not touching bone or resting in fat. Roast 2 1/2 hours for
medium-rare (135 degrees) or 2 3/4 hours for medium (145 degrees). Let
stand 15 minutes before cutting into slices.
Add 3/4 cup of water to roasting pan. Place pan over two stovetop burners
over medium heat. Scrape up browned bits with a wooden spoon; cook 2 to 3
minutes for flavors to blend. Strain and serve with beef.

Diet informationThe Zone Diet The Zone diet is a nutrition and weightloss system initially devised by Barry Sears in a number of books. The Zone diet isn’t specifically a fat reduction diet, nevertheless many zone diet followers claim that they actually manage to lose body weight when following it. The science behind the Zone Diet is that if one can control the amount of two key hormones, (insulin and glucogen), then your body releases eicosanoids (anti-inflamatory chemicals) which puts your body in a state of equilibrium which is a lot more wholesome than other diets, this is referred to as 'the zone'. Sears believes that when in the 'zone', your body is much more efficient and, as a result, does not build up layers of fat. The most important technique of the system is to monitor and control the exact ratio of carbs to proteins, and to make sure your diet has increased levels of Omega 3 fish oils. The South Beach Diet The South Beach diet is a diet system invented by Miami, florida-area cardiologist arthur agatston which stresses the consumption of "good carbohydrates" instead of "bad carbs" and "good fats" instead of "bad fats" Agatston invented his system for people who have cardiac problems, as a consequence of his analysis of scientific research on other dietary studies. Approved foods include, lean cuts of beef, chicken breast, seafood, feta cheese, peanuts, nonfat milk and some vegatables, such as artichokes, cauliflower and turnips. The Atkins’ Diet First invented by doctor atkins in the 1960s, the famous atkins diet is still widely used today. Having many well known film stars amongst its supporters, it supposedly allows weight reduction but still allows you to eat foods that are normally considered bad for diets, such as meat and hard cheeses. With this diet you are encouraged to eat meat and fat, it is carbohydrates that need to be avoided. Because of this, it is known as a low carb/high protein, nutrition and weight loss system. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour. On the atkins diet the foods you are encouraged to eat are nutrient-rich unprocessed foods such as meat, fish and, as a consequence, poultry. You also can eat shellfish, regular full fat cheese, butter and, as a consequence, olive oil. The Glycaemic Index Diet The glycaemic index nutrition and weightloss system is based on the gi (or glycaemic index), a list showing foods and a score illustrating the ease that the energy of the food type gets converted to sugar in your system. The believe is that long-acting types of food (ie those with a low Gi score), suppress your appetite and help you to reduce your intake of food without craving snacks all the time. It is also extremely useful for folk with diabetes, as the low GI types of food are useful in preventing surges in glucose levels. |
