Ingredients
18 pitted prunes
Dry sherry, to cover prunes
6 cornish hens - (1 lb ea)
= (or 3 two-pound chickens)
1 tbsp canola oil
Salt, to taste
Freshly-ground black pepper, to taste
2 tbsp currant jelly
2 tbsp sherry
Directions
Place prunes in bowl. Marinate in sherry overnight.
Preheat oven to 425 degrees.
Wash hens. Season cavities with salt and pepper. Drain prunes. Stuff 3
prunes in 1-pound hens or 6 prunes in 2-pound hens. Close with toothpicks.
Tie legs together. Place in baking dish on rack. Brush with oil, salt,
and pepper, and place in oven. Bake 25 minutes.
Melt jelly with 2 tablespoons sherry. Brush hens with glaze and bake 10
minutes. Repeat. Bake 45 minutes in all. If using 2-pound hens, cut in
half down the middle. Arrange hens with 3 prunes under each half. Remove
toothpicks and untie legs.
This recipe yields 6 servings. Serving size: 1/2 (2-pound) bird or 1
(1-pound) bird.

Diet informationThe South Beach Diet The South Beach diet is a diet plan created by Cardiologist arthur agatston which stresses the consumption of "good carbohydrates" instead of "bad carbs" and "good fats" instead of "bad fats" Dr. agatston invented his weight loss system for people who have cardiac problems, as a consequence of his analysis of scientific data on other diets. "good" foods include, veal cutlets, skinless poultry, seafood, fat-free cheeses, pecan halves, nonfat yoghurt and certain vegetables, like black beans, lettuce and turnips. The Glycaemic Index Diet The gi index nutrition and weight loss system is based on the gi (or glycaemic index), a list showing food types and a score representing the speed that the carbs of the food type gets transformed to sugar in the dieters bloodstream. The theory is that slow acting foods (ie those food types with a low Glycaemic index score), keep you satisfied for a longer period of time and mean that you can reduce your consumption of food without craving snacks all the time. It's also very efficient for individuals with diabetes, as the low GI foods are useful in controlling rises in glucose secretion. The Zone Diet The Zone diet is a nutrition and weight loss system initially suggested by Barry Sears in a series of books, publications and an associated website. The Zone diet isn’t particularly a weight reduction diet, nevertheless many 'zone dieters' believe that they actually manage to lose weight when following it. The main theory behind the Zone Diet is that if one can control the levels of two important hormones, (insulin and glucogen), then anti-inflammatory chemicals are released which puts your body in a state of equilibrium which is a lot more healthful than normal, this is referred to as 'the zone'. Sears claims that if you get into this 'zone', your metabolism is working at its most efficient and, because of this, does not convert energy to unsightly fat. The main procedure of the system is to keep tight control over the precise ratio of carbohydrates to proteins, and to make sure your diet has high levels of Omega 6 and omega 3 fish oils. |
