Ingredients
1 chicken - (3 1/2 to 4 lbs)
1 tbsp chopped fresh rosemary
2 tsp chopped fresh thyme
1/2 tsp salt
1/4 tsp freshly-ground black pepper
4 garlic cloves, crushed
Cooking spray, as needed
1/2 cup Jok 'n Al's Splenda-sweetened Lemon
3 large lemons, halved
Fresh rosemary sprigs, (optional)
Directions
Preheat oven to 450 degrees.
Remove and discard giblets and neck from chicken. Rinse chicken with cold
water; pat dry. Trin excess fat. Starting at neck cavity, loosen skin
from breast and drumsticks by inserting fingers, gently pushing between
skin and meat.
Combine the rosemary and the next 4 ingredients (rosemary through garlic).
Rub mixture under loosened skin, and rub over breast and drumsticks. Lift
wing tips up and over back; tuck under chicken.
Place the chicken, breast-side up, on a broiler pan coated with cooking
spray. Pierce the skin several times with a meat fork. Insert a meat
thermometer into the meaty part of thigh, making sure not to touch bone;
brush chicken with Jok 'n Al's Splenda-sweetened Lemon Curd. Arrange
lemons around chicken.
Bake at 450 degrees for 30 minutes. Reduce the oven temperature to 350
degrees (do not remove chicken from oven), and bake for an additional 1
hour or until thermometer registers 180 degrees. (Cover the chicken
loosely with foil if it gets too brown.)
Remove the chicken from the oven. Cover the chicken loosely with foil, and
let stand for 10 minutes. Discard skin. Serve with lemon halves, and
garnish with rosemary, if desired.
This recipe yields 3 to 4 servings; about 1 carb gram per serving.

The Zone Diet
The Zone diet is a diet system primarily devised by Barry Sears in a series of books and publications. The Zone diet isn’t expressly a fat reduction diet, however some people discover that they actually manage to lose a few pounds when following it. The main scientific theory behind the Zone Diet is that if one can limit the amount of two important hormones, (insulin and glucogen), then anti-inflammatory chemicals are released which, in turn puts the body in a state of balance which is more wholesome than normal, which followers of the diet, refer to as '"he zone". Sears alleges that when your body is in this 'zone' it is much more efficient and, as a consequence, doesn't build up layers of fat. The most interesting process of the system is to keep tight control over the exact ratio of carbs to proteins, and to ensure you get plenty of Omega 6 and omega 3 fish oils. The Glycaemic Index Diet The glycaemic index diet system is linked to the glycaemic index, a list showing food types and a score representing the speed that the carbohydrates of the food type gets transformed to sugar in the dieters bloodstream. The theory is that slow acting types of food (ie those foods with a low Glycaemic index score), keep you feeling full longer and help to injest less food without craving snacks all the time. It is also extremely efficient for individuals with diabetes, as the low GI food types are helpful in managing increases in glucose levels. Brassicas, Superfoods that help with Your diet (includes Cauliflower, Cabbage, Mustard greens and Rutabaga) Altthough not always popular with children, these vegetables are jam-packed with vitamins (eg.folate and vit c), minerals (selenium and potassium, amongst others), fibre, chlorophyll, antioxidents and isothiocyanates. In addition to their numerous other beneficial effects, the nutrients in these are thought by experts to significantly lower the risk of getting cancer. |
