Ingredients


SEASONING MIX

1 tsp salt
1 tsp dillweed
1 tsp dried sweet basil leaves
1/4 tsp black pepper
1/4 tsp white pepper

MEAT AND VEGETABLES

8 chicken breasts, boneless skinless, , (2 to 3 oz each
1 tbsp cornstarch plus
2 tsp cornstarch
1 cup apple juice
1 1/2 cup defatted chicken stock
2 cup julienned onions
1/2 cup fresh lemon juice, in all
2 package artificial sweetener (1 gram each), , optional


Directions

TO SEASON CHICKEN: Combine seasoning mix ingredients in small bowl.
Sprinkle all surfaces of chicken evenly with 2 teaspoons seasoning
mix. Rub it in well. Dissolve cornstarch in 1/4 cup apple juice. Set
aside.

Preheat heavy 10-inch skillet, preferably non-stick, over high heat
to 350 degrees for about 4 minutes. Place 4 chicken breasts in
skillet. Lower heat to medium. Brown for at least 1 minute per side.
Remove chicken. Brown 4 more. Set all the chicken aside.

Return heat to high. Stir in 1/2 cup stock, scraping bottom of
skillet to clear it of all browned bits. Add onions and remaining
seasoning mix. Stir. Cook for 3 to 4 minutes, or until all liquid
evaporates. Stir in 1/4 of lemon juice. Scrape bottom of skillet
again to clear it. Cook for 3 to 4 minutes, or until liquid
evaporates. Add 1/2 cup apple juice. Clear bottom and side of
skillet. Cook for 2 to 3 minutes, or until about half of the liquid
evaporates.

Stir in remaining 1 cup of stock, the 1/4 cup lemon juice and the
1/4 cup apple juice. Bring to a boil (will take 2 to 3 minutes),
whisk in the cornstarch-apple juice mixture, and return to a boil.
Return the chicken to the skillet, lower the heat to medium, and cook
until the chicken is done all the way through, about 4 to 5 minutes.
Turn off the heat, remove the chicken, and if desired, whisk in the
artificial sweetener.

Makes 4 servings.

Types of diet


The Atkins’ Diet
Although it originated back in the 1960s, the atkins diet has been one of the most popular weight loss systms over the last few years. Although highly controversial, it enables weight loss whilst allowing foods that are normally considered bad for diets, like pork and cheeses.
With the atkins diet you eat protein and fat, it is the carbs that are on the banned list. It is referred to as a low carbohydrate/high protein, nutrition system.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
Unlike other diets, on the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods such as meat, fish and, as a consequence, poultry. You also can eat shellfish, regular full fat cheese, butter and, as a result, olive oil.




The South Beach Diet
The South Beach diet is a diet system invented by Miami, florida-area cardiologist arthur agatston which stresses the consumption of "good carbohydrates" instead of "bad carbohydrates" and "good fats" instead of "bad fats"
Doctor agatston invented this diet for his cardiac patients, as a consequence of his analysis of scientific studies completed on other weight loss systems.
Examples of good foods include, broiled ham, chicken breast, fish and shellfish, low or fat free cheeses, peanut butter, eggs and some vegatables, such as asparagus, broccoli and spinach.


The Zone Diet
The Zone diet is a diet initially created by Barry Sears in a number of books. The Zone diet is not particularly a fat reduction diet, but many 'zone dieters' discover that they really manage to lose a few pounds by following the zone diet.
The science behind the Zone Diet is that if one can gain control of the levels of the hormones 'insulin' and 'glucogen', then your body releases eicosanoids (anti-inflamatory chemicals) which, as a consequence puts your body in a state of equilibrium that is far more wholesome than it normally is, known as the 'zone'.
Sears claims that a body that is in 'the zone' is perfectly balanced and, because of this, doesn't convert energy to unsightly fat.
The main method of the zone diet is to monitor and control the exact ratio of carbs to proteins, and to ensure you get high levels of Omega 6 and omega 3 fish oils.
