Ingredients
=== PINEAPPLE SALSA ===
1/2 large pineapple, peeled, cored,
and chopped
= (or 2 [15-oz] cans pineapple chun
drained)
1 large red pepper, chopped
1 large red onion, chopped
1 jalapeño pepper, minced
1/2 cup fresh orange juice
1/3 cup lime juice
=== PASTA WITH GRILLED SHRIMP ===
1 1/2 lb deveined peeled large shrimp
6 cup cooked rotini noodles
Directions
In a large bowl, combine all ingredients for the salsa. Set aside.
Prepare an outdoor grill with an oiled rack set 6 inches from the coals.
On a gas grill, place the setting to high. Grill the shrimp for 2 minutes
per side.
Toss the cooked noodles with the salsa. Arrange the shrimp on the pasta
and serve.
This recipe yields 6 servings. Serving size: 3 ounces shrimp, 1 cup pasta.
