Ingredients
4 boneless skinless chicken breasts, halved
2 tbsp butter, melted
1/2 tsp salt, (optional)
Freshly-ground black pepper, to taste
3 tbsp flour
1/2 tsp salt, (optional)
1/4 tsp dry mustard
1/2 tsp cinnamon
1/8 tsp ground ginger
1 1/2 cup orange juice, boiling
Directions
Preheat oven to 375 degrees. Place chicken breasts in baking dish. Brush
with melted butter. Sprinkle with salt and pepper. Bake 15 minutes,
uncovered.
Put remaining butter in small saucepan. Add flour, salt, mustard,
cinnamon, and ginger. Cook, stirring, 2 to 3 minutes. Remove from heat
and pour on boiling orange juice, beating vigorously with a wire whisk.
Cook, stirring, 5 minutes or until thickened. Pour over chicken and bake
another 15 minutes. Set oven to broil and brown chicken for 2 to 3 minutes
before serving.
This recipe yields 8 servings. Serving size: 1/8 recipe.
