Ingredients
1 1/4 cup well-toasted whole almonds
3 tbsp unsalted butter
2 tbsp brown Sugar Twin
A large pinch of cinnamon
5 tsp gelatin
2 cup whipping cream
3 eggs, separated
2 lb cream cheese, room temperature
1/4 cup Splenda
1/4 cup pourable white Sugar Twin
2 tsp pure vanilla extract
Directions
Chop or pulse the almonds in a food processor so half of them are finely
chopped and half of them remain coarse.
In a heavy pot melt the butter over medium heat until it turns a rich,
nutty smelling brown. Add the almonds, Sugar Twin and cinnamon. Stir well
and press into the bottom of a 10-inch spring form pan. Refrigerate.
Place 1 cup of the whipping cream in a heatproof bowl. Sprinkle the
gelatin over the whipping cream and let stand until softened. Beat in the
egg yolks. Over a pot of simmering water beat the mixture with a whisk
until it thickens and increases slightly in volume. Remove from the heat
and let cool slightly.
Beat the cream cheese until smooth. Add the Splenda, Sugar Twin and
vanilla. Beat until well combined. Beat in the gelatin mixture.
Beat the remaining cream to stiff peaks and fold into the cream cheese
mixture. Beat the egg whites to medium peaks and fold into the cream
cheese mixture.
Pour into the prepared crust and chill overnight.
To cut a cheesecake neatly, Dip your knife into very hot water and wipe the
water off before making each cut. Lining the bottom of the pan with
parchment paper will help the crust lift off the pan cleanly.
This recipe yields 1 ten-inch cake for 16 servings.

Comments: I like really light cheesecakes and was very pleased with the
way this turned out. The nutty crust was compared to the middle of Almond
Rocca. Browning the almonds well and cooking the butter until browned
really adds an extra dimension of taste.

Diet typesThe Atkins’ Diet First invented by doctor atkins in the sixities, the famous atkins diet achieved most of its fame during the last decade. Although not accepted by all scientists, it claims to allow weight reduction whilst encouraging you to eat many of the foods you love, for example fatty meat and butter. With the atkins diet you are encouraged to eat meat and fat, it is the carbs that must be avoided. It is referred to as a low carbohydrate/high protein, nutrition and weightloss system. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour. On the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods such as meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter and, as a result, olive oil. The Atkins’ Diet Theory The logic of the atkins diet is that even if our bodies use both fats and carbohydrates to convert into glucose, it is the carbohydrates that are burned initially. If we cut down on carbohydrates, our bodies will utilise our fat and we will achieve weight loss. Although inviting, this theory is divisive, not all nutritionalists agree and some hold that it might be bad for your health. The Zone Diet The Zone diet is a nutrition system first devised by Barry Sears in a number of books, publications and an associated web site. The Zone diet isn’t exactly a weight loss diet, nevertheless many zone diet fans claim that they manage to lose body weight by following this system. The science claimed for the Zone Diet is that if you manage to limit the levels of two important hormones, (insulin and glucogen), then your body releases eicosanoids which, in turn puts one's body in a state of equilibrium that is a lot more wholesome than it normally is, known as the 'zone'. Sears states that if you get into this 'zone', your body is working at its best and, because of this, doesn't need to convert surplus energy to fat. The key technique of the zone system is to keep tight control over the ratio of carbohydrates to proteins, and to ensure you get plenty of Omega 6 and omega 3 fish oils. The South Beach Diet The South Beach diet is a weight loss system created by Florida-based cardiologist arthur agatston which encourages that dieters should eat "good carbs" instead of "bad carbs" and "good fats" instead of "bad fats" Doctor agatston invented the south beach diet for people who have heart disease, as a result of his analysis of scientific research on other nutritional studies. Examples of good foods include, canadian bacon, turkey breast, fish and shellfish, provolone cheese, pistachios, eggs and certain vegetables, such as lentils, cauliflower and sprouts. The Glycaemic Index Diet The gi (or glycaemic index) nutrition and weightloss system is linked to the gi index, a list of types of food and an indicator of the rapidity that the glucose and energy of the food gets transformed to glucose in the dieters body. The claim is that slow acting foods (ie those food types with a low Glycaemic score), will keep you feeling full for longer and mean that you can reduce your consumption of food without feeling you are always hungry. It's also extremely beneficial for diabetes sufferers, as the low GI foods are helpful in reducing rises in glucose levels. |
