Ingredients
4 oz diced green chilies
2 oz diced pimentos, drained
3 cup precooked white rice
2 egg substitute equivalents
1/3 cup skim milk
1/2 tsp cumin
1 dash salt
1 dash freshly-ground black pepper
1 cup low-fat cheddar cheese
Directions
Preheat the oven to 400 degrees. In a large mixing bowl, combine all
ingredients except 1/2 cup of the cheese.
Spoon mixture evenly into muffin cups and sprinkle with remaining cheese.
Bake for 12 to 15 minutes or until set. Carefully remove the quiches from
the pan, arrange on a platter, and serve.
This recipe yields 12 servings. Serving size: 1 muffin cup.
