Ingredients
1 cup self-rising cornmeal
1 cup (4 oz.) shredded low-fat process am, erican cheese
1 cup whole kernal corn
1 cup skim milk
1/2 cup chopped onion
1/3 cup reduced-calorie margarine
2 tbsp chopped jalapeno pepper
1/2 tsp garlic powder
1 (4 oz) jar diced pimento, drained
1 vegetable cooking spray
Directions
Combine first 9 ingredients in a medium bowl, stirring well.
Pour batter into a 10 1/2-inch cast-iron skillet coated with
cooking spray. Bake at 350 degrees for 45 minutes or until golden.
Cut into 10 wedges, and serve warm. Yield: 10 wedges

The South Beach Diet
The South Beach diet is a diet created by Florida-based cardiologist arthur agatston which stresses that one should eat "good carbs" instead of "bad carbs" and "good fats" instead of "bad fats" Dr. agatston invented the south beach diet for his cardiac patients, as a result of his analysis of scientific data on other diets. Approved foods include, lean cuts of beef, turkey breast, prawns, low or fat free cheeses, pistachios, lowfat yoghurt and some vegatables, such as lentils, lettuce and snow peas. Lycopene foods (includes apricots, red bell peppers and tomato puree) The phytochemical lycopene is a natural compound used to color foods and member of the carotenid family. Lycopene is the agent responsible for the vivid red hue of some types of food. Intrestingly, unlike most other healthy agents, it does not degrade if cooked, but is observably improved by going through the cooking process. . Its most valuable health contribution is that it works as an antioxidant and is believed to help reduce the chances of contracting cancer. This useful phytochemical is the most efficacious quencher of singlet oxygen, which is correlated with aging of the skin. It's also thought by many experts to slow down the development of diseases affecting arterial blood vessels. |
