Ingredients
1 cup yellow cornmeal
1/2 cup unbleached white flour
1 tsp baking powder
2 tbsp sugar
2 eggs, beaten
1 cup evaporated skim milk
1/2 cup minced onion
2 jalapeño peppers, minced
6 oz shredded low-fat cheddar cheese
1 cup corn
1 tbsp canola oil
Directions
Preheat the oven to 350 degrees. Combine the cornmeal, flour, baking
powder, and sugar in a medium bowl.
In a large bowl, combine the remaining ingredients. Stir in the cornmeal
mixture. Pour into an 8- by 8-inch nonstick pan and bake until browned,
about 35 to 40 minutes.
This recipe yields 6 servings. Serving size: one 2-inch square.

The Glycaemic Index Diet
The gi index weight loss program is based on the gi index, a chart showing foods and a score representing the speed that the carbohydrates in the food gets transformed to glucose in the dieters blood stream. "good" foods include, veal cutlets, turkey bacon, clams, feta cheese, pecan halves, lowfat or nonfat milk and some vegatables, such as green beans, broccoli and turnips. Healthy foods with carotenes (includes cilantro, mangos and tomato ketchup) These orange and green vegetables and fruits have high levels of carotenes believed by experts to play a major part in minimizing the risk of cancer, specifically of the the esophagus. The majority of these are also good for weight loss, so make sure you add them to your weight loss regime. |
