Ingredients
1 cup yellow cornmeal
1/2 cup unbleached white flour
1 tsp baking powder
2 tbsp sugar
2 eggs, beaten
1 cup evaporated skim milk
1/2 cup minced onion
2 jalapeño peppers, minced
6 oz shredded low-fat cheddar cheese
1 cup corn
1 tbsp canola oil
Directions
Preheat the oven to 350 degrees. Combine the cornmeal, flour, baking
powder, and sugar in a medium bowl.
In a large bowl, combine the remaining ingredients. Stir in the cornmeal
mixture. Pour into an 8- by 8-inch nonstick pan and bake until browned,
about 35 to 40 minutes.
This recipe yields 6 servings. Serving size: one 2-inch square.

The Atkins’ Diet Developed by dr. robert atkins in the 1960s, the atkins diet has been one of the most popular weight loss systems over the last few years. Popular with many famous celebrities, it allows weight reduction whilst allowing you to eat many foods that would not be part of a normal diet, eg meat and butter. With this diet you eat protein and fat, it is the carbs that are on the banned list. It is often referred to as a low carb/high protein, nutrition and weightloss system. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour. Unlike other diets, on the atkins diet the foods you are encouraged to eat are still nutrient-rich unprocessed foods like meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil. The Glycaemic Index Diet The gi (or glycaemic index) nutrition and weightloss system is based on the glycaemic index, a list showing foods and a score illustrating the rapidity with which the glucose and energy of the food gets changed to glucose in the dieters bloodstream. The theory is that slow release foods (ie with a low Gi score), suppress your appetite and help to reduce your consumption of food without feeling you are missing out. It's also very useful for individuals with diabetes, as the low GI types of food are beneficial in controlling rises in blood sugar amount. |
