The Recipe Instructions
 

 

Ingredients

1 large French baguette - (abt 16 oz)
4 medium tomatoes - (abt 1 1/4 lbs total), peeled, chopped
4 scallions, white part and 8" green, finely chopped
1 medium green bell pepper, seeded, chopped
1 can water-packed tuna - (6 oz), drained, flaked
1 tbsp capers, drained, (optional)
=== DRESSING ===
3 tbsp red wine vinegar
2 tbsp olive oil
1 tsp Dijon mustard
1 garlic clove, minced
2 tbsp chopped flat-leaf parsley
1 tbsp chopped fresh mint
= (or 1 tspn crushed dried mint)
1 tsp fresh thyme leaves
= (or 1/4 tspn crushed dried thyme)


Directions

Cut the baguette in half lengthwise and scoop out some of the bread to
create a shell. Set crumbs aside.

In a large bowl, combine tomatoes, scallions, bell pepper, tuna, capers (if
using), and reserved bread crumbs.

In a small bowl, whisk together dressing ingredients. Drizzle over tuna
mixture and toss to mix thoroughly. Mound the mixture into the bottom half
of the bread, packing down firmly. Top with other half of the bread.
Press bread halves together and tightly wrap in plastic wrap or aluminum
foil. Refrigerate for at least several hours or overnight.

Transport the bread, still wrapped, to the picnic site. Transfer to a
slicing board and cut into 6 portions.

This recipe yields 6 servings.

Exchanges Per Serving: 1 Low Lean Protein, 3 Carbohydrate (2 1/2
Bread/Starch, 1 Vegetable), 1 Fat.

Diet types


The Zone Diet
The Zone diet is a nutrition and weight loss system primarily advocated by Barry Sears in a number of books, publications and an accompanying website. The Zone diet isn’t expressly a fat reduction diet, but many 'zone dieters' discover that they actually reduce weight by following this system.
The main theory of the Zone Diet is that if one can limit the amount of insulin and glucogen (both hormones), then your body releases eicosanoids which, as a consequence puts your body in a state of equilibrium which is more healthy than other diets, which followers of the diet, refer to as '"he zone".
Sears alleges that when in the 'zone', your body is perfectly balanced and, as a consequence, doesn't need to convert surplus energy to fat.
The key process of the zone system is to maintain the precise ratio of carbohydrates to proteins, and to ensure your diet has increased amounts of Omega 6 and omega 3 fish oils.


The Glycaemic Index Diet
The glycaemic index diet is based around the glycaemic index, a list of food types and a score representing the ease with which the glucose in the food type gets transformed to glucose in the dieters blood stream. The theory is that slow release foods (ie with a low Glycaemic score), will keep you feeling full for longer and mean that you can cut down on food without craving snacks all the time.
It's also extremeley useful for diabetes sufferers, as the low GI foods are useful in preventing rises in blood sugar amount.
