Ingredients
1 cup flour, unbleached white
1 cup skim milk, at room temp
1 tbsp olive oil, extra virgin
1/4 tsp salt, or to taste
1/2 tsp black pepper, coarsely ground or cracke
2 tsp lemon rind, freshly grated
3 each egg whites, lightly beaten
Directions
*Anne's note:I'd omit the salt to reduce the sodium
"These delicious popovers take advantage of lemon's strong affinity
with freshly ground black pepper. They rise best in baked in deep
molds in a very hot oven. One of the best ways to grate lemon peel is
to remove the zest in strips using a vegetable peeler, then grind it
to a powder in a spice mill."
Preheat oven to 450F. Sift the flour into a mixing bowl and gradually
whisk in the milk. Add the remaining ingredients, whisking just to
mix. The mixture should be the consistency of heavy cream. If
necessary, add more milk. Grease popover molds or muffin cups with
vegetable oil spray or a little olive oil. Fill each mold 1/2 full.
Bake for 15 minutes without opening the door. Reduce heat to 375F and
continue baking for 20 to 25 minutes, or until the popovers are
browned. Unmold and serve at once.

Foods containing allyl sulfides
( includes pickled shallots, chives and green onion) The alliaceae family of foods is rich in allyl sulfides, a chemical which experts believe could be linked to a reduced risk of stomach and colon cancer. Although there is too little hard medical proof published, allyl sulphides are also thought to reduce the symptoms of colds, high blood pressure and physical exhaustion. Foods containing allyl sulfides also help you lose weight, so should be included in your weight loss regime. The South Beach Diet The South Beach diet is a weight loss system created by Miami-based cardiologist arthur agatston which stresses that dieters should eat "good carbohydrates" instead of "bad carbs" and "good fats" instead of "bad fats" Dr. agatston invented this diet as an aid to patients with heart conditions, as a consequence of his detailed analysis of scientific data completed on other weight loss systems. Approved foods include, canadian bacon, chicken breast, prawns, low or fat free cheeses, pecan halves, lowfat or nonfat milk and some vegatables, such as split peas, lettuce and spinach. |
