Ingredients
3 lb fryer chicken, skin removed
1/4 cup lime juice
1/4 cup lemon juice
1/3 cup dry white wine
1 garlic clove, crushed
1 tsp thyme
1 tsp salt
1/8 tsp freshly-ground black pepper
Directions
Cut the chicken into pieces, rinse and pat dry. Place the chicken in a
bowl or plastic bag. Combine the remaining ingredients and pour over the
chicken. Marinate 2 or more hours in the refrigerator.
Heat the oven to 425 degrees. Spray a baking pan with nonstick cooking
spray. Arrange the chicken pieces in the pan and bake for 40 minutes or
until done.
This recipe yields 6 servings. Serving size: 4 ounces.
