Ingredients
1 lb fresh spinach
2 tbsp olive oil
2 1/4 cup chicken broth, (fat-free) divided use
1/4 cup onion, finely chopped
1/4 cup celery, finely chopped
1 tsp salt, or to taste
1/8 tsp ground white pepper
1 1/2 cup rice
Directions
Wash the sand from the spinach. Discard the stems and place the leaves in
a food processor. Chop in batches and set aside. Heat the oil and 1/4 cup
chicken stock in a medium saucepan. Add onion, celery, salt and pepper.
Cook briefly, stirring. Raise the heat, and add thespinach. Cook until
spinach begines to relese its own liquid. Stir if necessary. With the heat
still on high, add 2 cups of chicken stock (or water). Reduce the heat and
cover. Continue to cooking 20 minutes. Check to see if the rice is done or
needs more liquid. To serve, place on an attractive serving platter.

Lycopene super foods (includes watermelon, red peppers & rosehip) Lycopene is a naturally occurring compound used to color foods and a member of the carotenid family. It is responsible for the red hue of quite a few fruits and vegetables. Fortunately, unlike numerous other nutritional compounds, lycopene is not damaged if it is cooked, but is truly strengthened by being heated. . Its most valuable advantage is that it behaves as an antioxidant and appears to be of use in the battle to lower the risks of developing cancer. It is the most potent quencher of singlet oxygen, which is correlated with aging of the skin. It is also thought by many researchers to slow down the development of atherosclerosis. Flavonoid superfoods (inlcudes olive oil, kale, soy and chamomile) The large family of compounds known as flavonoids which are present in these types of food show promise as anti-carcinogens. Nutritionalists studying the nutritional effects of flavonoids believe that they may well also have most other benefits to our health, amongst them, anti-asthma and antitumor properties. The majority of these are low in calories, so should be a part of every weight loss regime. The Zone Diet The Zone diet is a diet system primarily invented by Barry Sears in a series of books. The Zone diet isn’t distinctly a weight loss diet, although some people find that they lose body weight by following the zone diet. The 'science' claimed for the Zone Diet is that if you limit the levels of the hormones 'insulin' and 'glucogen', then anti-inflammatory chemicals are released which, as a consequence puts one's body in a state of balance that is far more healthy than other diets, this is referred to as 'the zone'. Sears claims that if you get into this 'zone', your body is working at its most efficient and, as a result, does not convert energy to unsightly fat. The main procedure of the zone diet is to control the precise ratio of carbohydrates to proteins, and to dose yourself with high levels of Omega 3 and omega 6. |
