Ingredients
350 g chicken breasts, bite size pieces
1 tbsp extra-virgin olive oil
2 tbsp water
1 large onion, finely chopped
1 clove garlic, minced
1 large green pepper, diced
2 cup zucchini, thinly sliced
3 tbsp dry sherry or chicken broth
15 oz tomato sauce
1/4 cup fresh parsley, finely chopped
3/4 tsp basil
1/2 tsp thyme, fresh
1/4 tsp oregano
1/8 tsp pepper
1 dash salt
8 oz capellini
Directions
1. In nonstick pan over med, heat chicken and oil, stirring
frequently for 3-4 mins until chicken is white on all sides. Remove
with slotted spoon and set aside.
2. Add water to pan and stir in onions and garlic. Cook, stirring
frequently, 6-7 mins until onions are tender (add more water if onions
begin to stick). Add all remaining ingredients but pasta. Add the
chicken and mix well. Bring to boil, then reduce heat, cover and
simmer 13-16 mins until vegetables are just tender. Add salt.
3. Meanwhile, cook capellini, drain and server topped with chicken
mixture.

Types of dietThe Atkins’ Diet Originating way back in the 1960s, the popular atkins diet achieved most of its fame during the last few years. Popular with many famous celebrities, it enables weight loss but still allows you to eat foods that are normally considered bad for diets, eg meat and butter. On the atkins diet you are encouraged to eat meat and fat, avoiding carbohydrates almost completely. It is often referred to as a low carbohydrate, high protein, diet. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour. Unlike other diets, on the atkins diet the foods you are encouraged to eat are nutrient-rich unprocessed foods such as meat, fish and, as a result, poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil. The Zone Diet The Zone diet is a diet initially devised by Barry Sears in a number of books, publications and an associated website. The Zone diet is not distinctly a weight reduction diet, but many zone diet followers claim that they manage to lose weight by following the zone diet. The scientific theory behind the Zone Diet is that if one can manage to gain control of the secretion of two key hormones, (insulin and glucogen), then your body releases eicosanoids (anti-inflamatory chemicals) which, in turn puts the body in a balanced state that is much, much more wholesome than normal, which followers of the diet, refer to as '"he zone". Sears states that when in the 'zone', your body is working at its most efficient and, as a result, doesn't convert energy to unsightly fat. The most important method of the zone diet is to keep tight control over the ratio of carbs to proteins, and to take increased levels of Omega 6 and omega 3 fish oils. |
