Ingredients
12 oz cooked sweet potatoes, peeled and cut in chunks
1 medium ripe banana, mashed
3 tsp brown sugar, firmly packed
2 tbsp reduced calorie margarine, +
2 tsp reduced calorie margarine
1/4 tsp ground nutmeg
1 tsp rum extract
1 egg white
Directions
Preheat oven to 350. In a large bowl, beat all ingredients except egg white
until smooth. Add a small amount of water if necessary, to get a smooth
consistency. Beat egg white until stiff. Fold gently into sweet potato
mixture. Spoon into a casserole that has been sprayed with a nonstick
cooking srpay. Bake, uncovered, 45 to 50 minutes, until lightly browned.
