Ingredients
3 lb broiler/fryer chicken,skined
3/4 cup shredded yellow squash
3/4 cup shredded zucchini
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1 1/4 cup toasted,wholewheat breadcrum
1 clove garlic, crushed
1 egg, beaten
1/4 cup chopped pecans
1/4 tsp salt
1/4 tsp pepper
3 tbsp unsweetened apple juice
2 tbsp honey
Directions
Discard giblets and neck of chicken (or save for stock.) Rinse
chicken under cold, running water, and pat dry. Set aside.
Coat a large nonstick skillet with Pam; place over med-hi heat until
hot. Add yellow squash, zucchini, onion, celery, and garlic, and
saute until tender-crisp. Drain. Combine vegetable mixture,
breadcrumbs, egg, pecans, salt, and pepper in a med bowl; stir well.
Place chicken, breast side up, on a rack in a roasting pan that has
been coated with Pam. Stuff lightly with dressing mixture. Truss
chicken (or put ball of foil in opening.) Combine apple juice and
honey, stirring well. Brush chicken with half of apple juice-honey
mixture. Bake at 350 deg F for 1 1/2- 2 hours or until drumsticks are
easy to move and juices run clear, basting occasionally with
remaining apple-honey muixture. PER SERVING: 266 calories, 26.8 g
protein, 10.8 g fat, 15.6 g carbohydrate 119 g cholesterol, 1.8 mg
iron, 246 mg sodium, 45 mg calcium.

Diet typesThe South Beach Diet The South Beach diet is a diet invented by Dr. arthur agatston, a cardiologist from miami, usa, which stresses that one should eat "good carbohydrates" instead of "bad carbs" and "good fats" instead of "bad fats" Agatston invented his weight loss regime for his cardiac patients, as a consequence of his detailed analysis of scientific data completed on other weight loss studies. The Zone Diet The Zone diet is a nutrition and weightloss system initially invented by Barry Sears in a number of books, publications and an associated website. The Zone diet isn’t exactly a weight reduction diet, however many followers believe that they really manage to lose weight by following the zone diet. The main theory of the Zone Diet is that if you can limit the secretion of two key hormones, (insulin and glucogen), then your body releases eicosanoids which puts one's body in a state of balance which is far more healthy than normal, which, not surprisingly, is known as 'the zone'. Sears believes that when your body is in this 'zone' it is working at its best and, as a consequence, doesn't need to build up stores of fat. The main procedure of the system is to keep tight control over the ratio of carbs to proteins, and to dose yourself with high levels of Omega 3 and omega 6. The Atkins’ Diet Developed by dr. robert atkins in the 1960s, the atkins diet achieved most of its fame during the last few years. Having many well known film stars amongst its supporters, it enables fat reduction whilst encouraging you to eat many foods that would not be part of a normal diet, like bacon and hard cheese. On the atkins diet you eat protein and fat, it is carbohydrates that need to be avoided. It is referred to as a low carbohydrate/high protein, nutrition and weight loss system. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour. With the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods like meat, fish and, as a result, poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil. |
