Ingredients
1/4 cup low-fat low-sodium chicken broth
1 garlic clove, minced
2 tbsp minced onion
1/4 cup minced carrot
1 1/2 cup short-grain brown rice
3 cup low-fat low-sodium chicken broth
1 tbsp minced basil - (to 2)
2 tsp minced parsley
1 tbsp lemon juice
1/4 tsp lemon rind
Directions
Heat the broth in a saucepan over medium-high heat. Add the garlic and
onion and sauté for 3 minutes. Add the carrot and sauté for 3 minutes.
Add the rice and sauté for 2 minutes.
Add the broth, bring; to a boil, lower the heat, cover, and simmer until
the water is absorbed, about 40 to 45 minutes. Add the remaining
ingredients and serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
