The Recipe Instructions
 

 

Ingredients

1 tbsp olive oil
1/2 cup chopped onions
1/2 cup chopped celery
1/4 cup chopped bell pepper
1 cup diced ham
4 cup chicken stock
1 bay leaf
1/2 tsp dried basil
1/4 cup cream
1/4 cup grated cheddar cheese
3/4 cup cubed Velveeta cheese
Chopped green onions, for garnish


Directions

Fry all onions, celery, and bell pepper in oil until tender. Add ham and
saute to release some oils and meld the flavors. Add stock/broth, bay
leaf, and basil.

Simmer to reduce slightly (20 to 30 minutes). Add cream and return to boil
to thicken a bit. Slowly add cheese -- stirring constantly.

Serve immediately. Garnish with green onion.

This recipe yields 8 servings; 3 carb grams per serving.
