The Recipe Instructions
 

 

Ingredients

1 medium pineapple - (abt 2 lbs), peeled, cored,
and cut into scant 1" chunks
3/4 cup unsweetened pineapple juice
2 tbsp lime juice
2 garlic cloves, minced
1/2 tsp minced jalapeño pepper - (to 1)
2 tbsp minced cilantro
2 tbsp cold water
1 tbsp cornstarch
1 tsp Equal For Recipes - (to 1 1/2)
= (or 3 to 4 packets Equal sweetene
or 2 to 3 tbspns Equal Spoonful)
Salt, to taste
Freshly-ground black pepper, to taste
6 halibut, haddock or salmon
steaks or fillets - (abt 4 oz ea), grilled


Directions

Heat pineapple, pineapple juice, lime juice, garlic and jalapeño pepper to
boiling in medium saucepan. Reduce heat and simmer, uncovered, 5 minutes.
Stir in cilantro; heat to boiling.

Mix cold water and cornstarch; stir into boiling mixture. Boil, stirring
constantly, until thickened. Remove from heat; cool 2 to 3 minutes. Stir
in Equal; season to taste with salt and pepper. Serve warm sauce over
fish.

This recipe yields 6 servings.
