Ingredients
FRUIT AND NUTS
1/2 cup walnuts
1 1/2 cup fresh or frozen cranberries
DRY INGREDIENTS
2 1/2 cup unbleached white flour
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
WET INGREDIENTS
1/2 cup fruit sweetener
1/2 cup oil
1/4 tsp grated orange zest
2 eggs
3 tbsp unsweetened orange juice
1/2 tsp vanilla extract
1 cup mashed ripe bananas
Directions
Preheat the oven to 350 degrees. Lightly spray two loaf pans with lecithin
spray. Toast the walnuts in the preheated oven for 7-10 minutes, stirring
occasionally. Allow the nuts to cool. Then coarsely chop them with a knife
or using a pulsing action in a food processor, and put them aside. Wash and
sort the cranberries, coarsely chop them with a knife or with the pulsing
action in a food processor and put them aside. Sift the dry ingredients
together. Use an electric mixer on medium speed to whisk together the
sweetener, oil, and orange zest, until thickened, about five minutes. Add
the eggs, one at a time beating well after each addition. Reduce speed and
stir in the orange juice, vanilla and mashed bananas. On low speed, slowly
add the sifted dry ingredients, walnuts, and cranberries. Mix just until
blended, being careful not to over mix. Pour the batter into the prepared
loaf pans. Bake the loaves on the middle shelf in the preheated oven for
50-60 minutes, until a toothpick inserted in the center of each loaf comes
out clean. Cool the loaves slightly before removing them from the pans and
cooling them on a wire rack. Wrap the cooled loaves in plastic wrap and let
them sit for a few hours to overnight at room temperature before slicing.

Put simply, a low calorie weight loss regime states that if you are going to lose weight, it is essential to take in fewer calories than you need. Definition of a calorie? The Atkins’ Diet Although it originated back in the 1960s, the atkins diet achieved most of its fame during the last decade. Having many well known film stars amongst its supporters, it claims to allow weight reduction whilst allowing you to eat foods that are normally considered bad for diets, like beef and butter. With this diet you are supposed to eat fat and protein, it is the carbs that must be avoided. It is referred to as a low carbohydrate/high protein, diet. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, amongst them, cereals and pasta made from white flour. Unlike other diets, with the atkins diet the foods you are encouraged to eat are still nutrient-rich unprocessed foods like meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil. Foods containing carotenes (includes parsley, mangos and sweet potatoes) These plants are rich in carotenes believed be a key nutrient in helping stop cancer, particularly cancers of the esophagus. Many also have a low calorie count, so should be included in every weight loss program. |
