The Recipe Instructions
 

 

Ingredients


WET INGREDIENTS

5 tbsp butter, softened
2 tbsp fruit sweetener
3 eggs
1 1/4 cup buttermilk

DRY INGREDIENTS

3/4 tsp baking poweder
3/4 tsp baking soda
1/4 tsp salt
1 1/8 cup cornmeal


Directions

Preheat the oven to 350 degrees. Spray a 9" square pan with lecithin spray.
With an electric mixer on medium high speed, use the paddle attachment or
beaters to cream the softened butter and fruit sweetener until light and
fluffy. Beat in the eggs, one at a time, being sure that the first egg is
incorporated before the next one is added. Sift the dry ingredients
together. Reduce the mixer speed to low. Add the sifted dry ingredients,
one third at a time, alternating with the buttermilk. Pour the batter into
the prepared 9" square pan. Place the pan on the middle shelf of the
preheated oven and bake for 30-35 minutes. When done the cornbread will be
a rich golden yellow and will spring back when touched lightly in its
center. Cool the cornbread in its pan on a wire rack. Cornbread is great
eaten hot from the oven. It is best stored at room temperature, well
wrapped in plastic.

The Atkins’ Diet
Originating way back in the 1960s, the atkins diet achieved most of its fame during the last decade. Having many well known film stars amongst its supporters, it enables weight reduction but still allows you to eat many foods that are not normally available to dieters, for example meat and some dairy produce.
With the atkins diet you are encouraged to eat meat and fat, avoiding carbohydrates almost completely. It is referred to as a high protein, low carb, weight loss program.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, amongst them, cereals and pasta made from white flour.
Unlike other diets, on the atkins diet the foods you are encouraged to eat are nutrient-rich unprocessed foods such as meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil.

The Atkins’ Diet Theory
The logic behind the popular atkins diet is that although our bodies use both fats and carbohydrates to change into carbohydrates, it is the carbs that are burned first. If we consume less carbs, we will deplete the fat we have stored and we will reduce weight. Although tempting, the atkins diet is controversial, not all medical experts agree and a good number of allege that it can sometimes be hazardous.
