The Recipe Instructions
 

 

Ingredients

4 chicken breasts, skinned, boned
1 lime, juice only
2 cl garlic, crushed
1 black pepper, to taste
1/2 tsp cumin
3 scallions, chopped
1 medium red bell pepper
1 medium yellow bell pepper
1 medium green bell pepper
8 whole-wheat tortillas
1 tbsp vegetable oil
1 tbsp water
2 tsp to 3 tsp jalapeno peppers, chopped fine
1 salt, to taste
1 fresh cilantro, chopped, to taste
1 medium tomato, diced
1 salsa, to taste

PER SERVING = 2 FAJITAS

Directions

Slice the chicken into chunks about 1/2 inch square.
Place them in a large bowl. Squeeze the lime juice over chicken.
Add the garlic, scallions, black pepper, and cumin, and toss to mix.
Slice the bell peppers into strips and set aside. Wrap the tortillas
in a thin, clean dishcloth, place them on an ovenproof plate, and put
the plate in the oven. Warm the tortillas at the lowest setting on
your oven while preparing the fajita mixture. Heat the oil and water
in a large saucepan over medium heat and add the chicken, bell
peppers, and jalapeno peppers. Add the greater amount of jalapeno if
you like your food very spicy. Saute, stirring frequently, until the
chicken and vegetables are cooked through, about 25 minutes. Add salt
to taste. Spread a spoonful of the fajita mixture in a thick line in
the middle of each tortilla. Top with cilantro, tomato, and salsa to
taste. Roll up the tortillas and serve. Makes 4 servings of 2 fajitas
each.

We made this for dinner, it was DELICIOUS! Instead of using the
scallions we used a medium onion, sliced thin.

The onion range of vegetables is high in allyl sulfides, a chemical which experts believe may be linked to a reduced risk of stomach and colon cancer.
Although there is not enough, real proof published, allyl sulphides are also thought to help with blood circulation, sterilization and fatigue.

Foods containing allyl sulfides are also low in calories, so should be included in every diet.



The Glycaemic Index Diet
The gi index diet system is reliant on the gi (or glycaemic index), a chart showing types of food and a score representing the rapidity that the glucose in the food type gets changed to sugar in your system. The theory is that long-acting types of food (ie those foods with a low Gi score), will keep you feeling full for longer and mean that you can take in fewer food without feeling you are missing out.
It's also beneficial for folk with diabetes, as the low GI types of food are helpful in managing increases in blood glucose amount.
