The Recipe Instructions
 

 

Ingredients

4 oz lowfat cream cheese
1 tbsp lowfat mayonnaise, plus 1 tsp.
2 cup water
8 large eggs
4 whole wheat english muffins, halved
1/2 cup minced green onions
1 tsp freshly grated nutmeg
1/4 cup grated parmesan cheese


Directions

1. In a small bowl mix together cream cheese and mayonnaise. Set aside
while poaching eggs.

2. In a large skillet over medium-high heat, bring the water to a boil.
Lower heat to keep water at an even simmer. Break each egg one at a time
into a small bowl and gently slide egg into the simmering water. Repeat
until all eggs are in water. Poach for 3 minutes.

3. While eggs are poaching, toast English muffins and spread each half with
cream cheese mixture. Place a poached egg on each half. Sprinkle each half
with green onions, nutmeg, and Parmesan. Serve immediately.

NOTES : This easy-to-make brunch item can replace eggs Benedict because it
is lower in calories. Lightly poached eggs are nestled on English muffin
halves spread with low-calorie cream cheese, then sprinkled with green
onions, Parmesan cheese, and nutmeg. Serve with mimosas made from champagne
or nonalcoholic sparkling wine and fresh orange juice, and accompany with
Carrot-Ginger Breakfast Muffins (recipe included in this cookbook). Recipe

The South Beach Diet
The South Beach diet is a diet plan started by Dr. arthur agatston which encourages that dieters should be eating "good carbohydrates" instead of "bad carbs" and "good fats" instead of "bad fats"
Dr. agatston invented his weight loss regime for his cardiac patients, as a result of his analysis of scientific data completed on other nutritional studies.
Examples of good foods include, veal cutlets, skinless poultry, shrimp, cottage cheese, pistachio nuts, nonfat milk and some vegatables, such as black beans, broccoli and turnips.


The Glycaemic Index Diet
The glycaemic index nutrition system is linked to the glycaemic index, a list of food types and a score representing the rapidity with which the carbohydrates in the food type gets converted to glucose in your system. The theory is that slow release foods (ie those with a low Gi number), suppress your appetite for longer and help you to eat less food without feeling you are missing out.
It is also especially beneficial for diabetes sufferers, as the low GI food types are helpful in preventing increases in blood sugar amount.
