Ingredients
6 oz yellow corn meal, (1 cup)
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 1/2 cup nonfat milk, *
2 tbsp honey
1 tsp vanilla extract
1 egg [replacer or 2 whites?]
1 cup canned corn, drained
2 tsp flour
Directions
We've used both corn and corn meal for a double impact in this bread
that goes well with any meal. * add 4 t of lemon juice to milk to
make sour milk. Preheat oven to 425 degrees. In a large bowl combine
corn meal, baking soda, baking powder and salt. In a blender
container combine, milk, honey, vanilla and egg. Blend until smooth.
Spray an 8"pan with nonstick cooking spray and place pan in oven to
preheat for 3 min. Stir liquid mixture into dry ingredients. Toss
corn with flour and stir into batter. Place batter in preheated pan
and bake 20-22 minutes until firm and lightly browned. Nutrition (per

Diet informationThe South Beach Diet The South Beach diet is a weight loss system started by Florida-based cardiologist arthur agatston which encourages that dieters should be eating "good carbohydrates" instead of "bad carbohydrates" and "good fats" instead of "bad fats" Doctor agatston developed his nutritional system for people who have cardiac problems, as a consequence of his detailed analysis of scientific studies completed on other dietary studies. "good" foods include, canadian bacon, skinless poultry, shellfish, provolone cheese, peanuts, nonfat yoghurt and some vegatables, such as chickpeas, cauliflower and sprouts. The Glycaemic Index Diet The glycaemic index diet is reliant on the glycaemic index, a chart showing foods and an indicator of the speed with which the glucose of the food type gets converted to sugar in your body. The theory is that slow acting types of food (ie those foods with a low Gi score), suppress your appetite and help to reduce your intake of food without feeling you are always hungry. It is also extremely useful for individuals with diabetes, as the low GI food types are useful in managing increases in blood glucose secretion. The Zone Diet The Zone diet is a diet initially invented by Barry Sears in a number of books and publications. The Zone diet isn’t distinctly a fat reduction diet, although many zone diet fans claim that they reduce a few pounds by following this system. The science behind the Zone Diet is that if you control the amount of insulin and glucogen (two hormones), then your body releases eicosanoids (anti-inflamatory chemicals) which, as a consequence puts your body in a state of balance which is much, much more healthful than usual, known as the 'zone'. Sears claims that when in the 'zone', your body is working at its most efficient and, as a result, doesn't need to build up stores of fat. The key technique of the diet is to control the exact ratio of carbohydrates to proteins, and to dose yourself with large amounts of Omega 3 fish oils. |
