Ingredients
1 lb cooked egg noodles
1 cup low-fat cottage cheese
3 egg substitutes
1/4 cup fresh orange juice
2 tsp vanilla
1 tart apple, unpeeled, diced
1 cup boiling water
1/2 cup raisins
1/2 cup canned crushed pineapple in its own, drained
1 tsp cinnamon
Directions
Preheat the oven to 350 degrees.
Combine all ingredients except the noodles and mix well. Add the noodles
and pour the mixture into a 2-quart casserole dish.
Bake the casserole for 50 minutes until set. Cut into squares and serve.
This recipe yields 6 servings. Serving size: 1 cup.
