Ingredients
1/2 cup corn meal
1 cup flour
1 tbsp baking powder
1 tsp salt
3/4 cup milk
1 tbsp butter or margarine, melted
Directions
Mix dry ingredients. Add lightly beaten egg, milk and butter. Bake
in muffins tins lined with cupcake papers for 20 minutes at 400F
*Be careful not to overbeat these (or any muffins) aor they will have
air tunnels and pointed tops.

Lycopene superfoods (includes water melon, papaya and tomato puree) The chemical lypcopene is a natural chemical compound and part of the same group of phytochemicals as carotene. Lycopene is the agent responsible for the red color of some fruit, vegetables and pulses. Unlike many nutritional compounds, this useful phytochemical is not damaged if it is cooked, rather it is truly increased in efficacy by the cooking process. . Its most important medical value is that it is an antioxidant and seems to help to reduce the chances of contracting cancer. It is the strongest fighter of singlet oxygen, which is linked with aging of the skin. It's also thought by nutritionalists to impede the progression of diseases affecting arterial blood vessels. The Atkins’ Diet Developed by dr. robert atkins in the 1960s, the atkins diet is still widely used today. Although not accepted by all scientists, it claims to allow weight reduction whilst allowing you to eat many foods that would not be part of a normal diet, like bacon and butter. Unlike other diets, with the atkins diet you are encouraged to eat meat and fat, it is the carbs that must be avoided. It is referred to as a low carbohydrate, high protein, diet system. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, amongst them, cereals and pasta made from white flour. Unlike other diets, with the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods like meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil. The Atkins’ Diet Theory The theory of the popular atkins diet is that although our bodies use both fats and carbs to burn into carbohydrates, it is the carbohydrates which are burned primarily. If we consume less carbs, our bodies will use up our fat and we will achieve weight loss. This theory is contentious, not all nutritionalists agree and some allege that it is sometimes unsafe. |
