Ingredients

1 1/2 cup egg whites (10-12 eggs)
1 cup sifted flour
1 1/2 cup sifted confectioners sugar
3 tbsp unsweetened cocoa
1/2 tsp cinnamon
1 1/2 tsp cream of tartar
1 tsp vanilla
1 cup sugar
Directions
1. Bring egg whites to room temperature, about 1 hour. 2. Meanwhile,
sift flour, cocoa, powdered sugar, and cinnamon together three times.
Set aside. 3. In a large mixer bowl, beat the egg whites, cream of
tartar, and vanilla with an electric mixer on medium speed until soft
peaks form. Gradually add the sugar, 2 Tablespoons at a time, beating
on high speed until stiff peaks form. Transfer to a larger bowl if
needed. 4. Sift about 1/4th of the flour mixture over the beaten egg
whites. Fold in gently. Repeat, folding in the remaining flour
mixture in fourths. 5. Pour into ungreased 10 inch tube pan. Bake on
the lowest rack in the oven at 350F for 40-45 minutes or until the
top springs back when touched. 6. Immediately invert cake (leave in
pan); cool thoroughly. Loosen sides of cake from pan; remove.
Makes 16 slices.
Nutritional info: Per serving: 117 calories, 3 gm protein, 27 gm
carbohydrate, 0 gm fat, 0 mg cholesterol, 39 mg sodium, 41 mg
potassium.

Carotenoid foods (includes cilantro, kale and winter squash) These colorful fruits and vegetables contain carotenes (alpha and beta) thought by many to play a role in minimizing the chances of contracting, particularly cancers of the stomach. Most also have a low calorie count, so should be included in every diet. The Atkins’ Diet Originating way back in the 1960s, the atkins diet achieved most of its fame during the last decade. Having many well known film stars amongst its supporters, it supposedly allows weight loss whilst still eating many of the foods you love, like beef and hard cheese. Unlike other diets, on the atkins diet you are encouraged to eat meat and fat, it is the carbs that are on the banned list. It is often referred to as a low carbohydrate/high protein, diet. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including, but not limited to, cereals and pasta made from white flour. On the atkins diet the foods you are encouraged to eat are nutrient-rich unprocessed foods like meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil. The Atkins’ Diet Theory The theory of the atkins diet is that although our bodies use both fats and carbohydrates to change into carbs, it is the carbohydrates which are burned primarily. If we consume less carbohydrates, our bodies will burn up the fat we already carry and we will become thinner. Although inviting, this theory is controversial, not all medical experts are in agreement and some allege that it might be risky. |
