Ingredients
8 boneless skinless chicken breast ha, lves, about 4 oz
1 ea
1 salt, fresh ground pepper to ta
1 cup wild rice, cooked
1 cup sun-dried tomatoes, oil-packed, well drained
1 cup fontina cheese, grated
1 egg
1/2 cup chicken stock, or broth
1 cup fresh raspberries, or frozen unsweet,th
2 tbsp raspberry liqueur, such as chambord
1 pinch sugar, to taste
1 tbsp arrowroot, or cornstarch
1/2 cup flour
Directions
Found this in the Thursday, March 17th Chicago Tribune food sec., adapted
from a recipe by chef Tony Huelster at Foxfires restaurant in Muncie, IN.
preparation time: 45 minutes cooking time: 30 minutes yield: 4 servings 1.
Put a chicken breast half between two pieces of thick plastic wrap. Pound
gently with the flat side of a mallet until it is nearly double its
original size and somewhat rectangular. Sprinkle lightly with salt and
pepper. 2. Make a line of tomatoes along the long side of the chicken,
about 1 inch from the edge. Roll edge over tomatoes one full turn so they
are completely covered. Now make a line of wild rice parallel to the tomato
line and sprinkle with grated fontina. Continue rolling the chicken breast
to completely cover the rice and form a tight cylinder. Mix the egg with 1
tablespoon of water and paint the inside edge of the chicken breast to help
seal the roll. 3. Repeat with remaining breasts. Refrigerate rolled chicken
on a baking sheet, covered, up to several hours ahead. 4. For the sauce,
heat chicken stock to a boil in a saucepan. If using frozen raspberries,
drain them. Add raspberries to stock along with raspberry liqueur and
sugar. Dissolve arrowroot in 1 tablespoon water. When stock returns to a
boil, stir in arrowroot and continue stirring until sauce thickens. SImmer
5 minutes, then pour suace through a fine mesh strainer to remove seeds.
Return to a clean saucepan; add salt and pepper. Recipe may be done ahead
to this point. 5. Heat oven to 350 degrees. Very lightly flour chicken
rolls and place on a baking sheet. Bake chicken until cooked through and
lightly browned, 15 to 20 minutes. Reheat sauce. 6. To serve, slice each
breast into 4 or 5 pieces. Coat a warm plate with sauce; arrange the
chicken roll pieces in a semi-circle and serve. Foxfire is owned by Jim

The South Beach Diet
The South Beach diet is a diet invented by Miami-based cardiologist arthur agatston which emphasizes that dieters should eat "good carbs" instead of "bad carbs" and "good fats" instead of "bad fats" Agatston developed his dietary regime for his cardiac patients, as a consequence of his detailed analysis of scientific studies completed on other diets. Approved foods include, lean cuts of beef, turkey bacon, prawns, feta cheese, peanut butter, lowfat yoghurt and certain vegetables, like artichokes, collard greens and snow peas. The Atkins’ Diet Originating way back in the 1960s, the atkins diet is still widely used today. Having many well known film stars amongst its supporters, it allows weight loss whilst encouraging you to eat many foods that are not normally available to dieters, like bacon and cheeses. With the atkins diet you are encouraged to eat meat and fat, it is the carbs that are on the banned list. It is referred to as a high protein, low carb, weight loss regime. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including, but not limited to, cereals and pasta made from white flour. With this diet the foods you are encouraged to eat are nutrient-rich unprocessed foods such as meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil. The Atkins’ Diet Theory The logic of the famous atkins diet is that if we take in fewer carbohydrates, we will use up our fat and we will get rid of some fat Foods containing allyl sulfides ( includes pickled shallots, chives and spring onions) The alliaceae family of vegetables is rich in allyl sulfides, a chemical which experts believe could be linked to a reduced risk of stomach and colon cancer. Although there is as yet, not enough scientific evidence available, allyl sulfides are also thought by many experts to reduce symptoms with antiinflammatory effect, sterilization and fatigue. Foods containing allyl sulfides are low in calories, so are ideal for including in your diet system. |
