Ingredients
6 chicken breast halves - (boned and, skinned)
3/4 cup dried prunes
1/2 cup dried apricots
1 tbsp olive oil
3 tbsp white vinegar
1/2 cup dry vermouth
2 garlic cloves, minced
1 1/2 tbsp brown sugar
1 tbsp oregano
1/2 tsp salt
2 cup sweet potatoes, peeled, - cut into 1/2-in
Directions
Place the chicken breasts in a medium bowl or casserole. Combine the
prunes, apricots, olive oil, vinegar, vermouth, garlic, brown sugar,
oregano, and salt. Pour over the chicken. Cover and marinate in the
refrigerator for several hours or overnight.
When you are ready to bake the chicken, place the sweet potato cubes
in a saucepan with water to cover. Bring to a boil and boil gently
for 3 minutes. Drain and set aside.
Remove the chicken from the marinade. Arrange the pieces in a shallow
baking pan. Spread the marinade over the chicken, cover with the
sweet potatoes, and bake covered at 350 degrees F. for 30-45 minutes,
until the chicken and sweet potatoes are fully cooked.

The Glycaemic Index Diet
The gi (or glycaemic index) diet system is reliant on the glycaemic index, a chart showing foods and a score illustrating the rapidity that the glucose of the food gets transformed to glucose in the dieters body. The believe is that slow release foods (ie those foods with a low Glycaemic index score), keep you satisfied for a longer period of time and help you to take in less food without feeling you are always hungry. It is also extremely beneficial for diabetes sufferers, as the low GI food types are useful in controlling surges in blood sugar levels. Foods containing allyl sulfides ( includes garlic, leeks and spring onions) The onion, leek and garlic family of foods is high in allyl sulphides, a chemical which experts believe could be linked to a reduced risk of stomach and colon cancer. Even though there is not enough, scientific evidence obtainable, allyl sulfides are also thought by nutritionalists to help with blood circulation, sterilization and diabetes. Foods containing allyl sulfides are also good for weight loss, so should be a part of every diet. |
