Ingredients
2 tsp peanut oil
2 medium carrots, peeled, and
sliced on the diagonal
2 celery stalks, diagonally sliced
1 1/2 lb boneless skinless chicken breasts, cut 3" strips
1 tbsp cornstarch
3/4 cup orange juice
3 tbsp lite soy sauce
1 tbsp honey
1 tsp minced ginger
1/4 cup toasted cashews, unsalted
1/4 cup minced scallions
Directions
Heat half the oil in a wok over high heat. Add the carrots and celery and
stir fry for 3 minutes. Add remaining oil and chicken and stir fry 5 more
minutes.
Dissolve the cornstarch into the orange juice. Mix in the soy sauce,
honey, and ginger. Add the sauce to the wok and cook over medium heat
until thickened. Top with the nuts and scallions.
This recipe yields 6 servings. Serving size: 3 to 4 ounces.
