Ingredients
1 1/4 cup long-grain rice
3/4 cup chicken broth
1 1/2 tbsp cornstarch
3 tbsp lemon juice
2 tbsp soy sauce
1 tbsp honey
1 tsp ground ginger
1 lb chicken breasts without skin
1 abt 4 breasts
2 tsp peanut oil -- or salad oil
1 1/4 cup red bell pepper -- 1 inch
1 squares
1 lb bok choy -- chopped (2)
Directions
1. Place rice and 2 1/2 cups water in a 2-3 qt pan; bring to boil over high
heat. Reduce heat and simmer, covered, until liquid is absorbed, abt 20
min.
2. Meanwhile, stir broth, cornstarch, lemon juice, 2 tablespoons soy sauce,
honey, and ginger until smooth; set aside.
3. Cut chicken crosswise into 1/2 inch wide strips. Place wok or stir fry
pan over high heat. When hot, add oil, then chicken. Stir often until
chicken is no longer pink in center, 2-3 min. Lift out and cover to keep
warm.
4. To wook, add bell pepper, bok choy, and 2 tablespoons water. Cover
tightly and cook until bell pepper is barely tender-crisp to bite, 1 1/2-2
min; lift out and set aside.
5. Stir broth mix, then pour into wok and stir bubbling, abt 1 min. Gently
mix in chicken and veggies. Spoon rice into center of a platter and arrange
chicken mix alongside, placing bok choy around rim of platter. Add add'l
soy sauce to taste.

The Zone Diet
The Zone diet is a weight loss program first suggested by Barry Sears in a number of books and publications. The Zone diet is not specifically a weight loss diet, nevertheless many zone diet fans discover that they reduce a few pounds by following the zone diet. The main scientific theory behind the Zone Diet is that if you control the amount of the hormones 'insulin' and 'glucogen', then your body releases eicosanoids which, as a consequence puts your body in a state of balance which is much, much more healthful than usual, this is referred to as 'the zone'. Sears holds the theory that when your body is in this 'zone' it is working at its best and, as a result, does not build up layers of fat. The most interesting technique of the zone system is to control the precise ratio of carbs to proteins, and to ensure your diet has large amounts of Omega 3 fish oils. The Glycaemic Index Diet The glycaemic index diet is reliant on the gi index, a chart showing food types and a score representing the ease that the energy of the food gets changed to glucose in your blood stream. The claim is that slow release foods (ie those foods with a low Gi number), suppress your appetite and help you to injest less food without craving snacks all the time. It's also especially beneficial for diabetes sufferers, as the low GI food types are beneficial in preventing increases in blood sugar secretion. Carotenoid foods (includes carrots, kale and winter squash) These colorful vegetables and fruits contain alpha and beta carotenes believed by doctors to help in minimising the risk of cancer, spefically cancer of the lungs and stomach. Many are also low in calories, so make sure you add them to your weight loss program. |
