Ingredients
2 1/2 cup brown rice, cooked
3 green onions (scallions),
1 chopped
1 cup lowfat cottage cheese -or-
1 hoop cheese
1 tsp dried dill
1/4 cup parmesan cheese, grated
1/2 cup lowfat milk
Directions
Combine all the ingredients in a mixing bowl. Pour into a lightly
oiled casserole. Bake in a 350-degree oven for 15 to 20 minutes.

The Atkins’ Diet
Although it originated back in the 1960s, the atkins diet has been one of the most popular weight loss systems over the last few years. Although not accepted by all scientists, it claims to allow fat reduction but still allows you to eat many foods that are not normally available to dieters, for example lamb and butter. Unlike other diets, with the atkins diet you are supposed to eat fat and protein, it is the carbs that are on the banned list. It is often referred to as a high protein, low carb, diet system. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour. Unlike other diets, with the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods such as meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil. The Atkins’ Diet Theory The theory of the famous atkins diet is that if we consume fewer carbs, we will burn up the fat we have stored and we will achieve weight loss Superfoods containing carotenes (includes carrots, turnip greens and tomato puree) These fruit and veg have high levels of carotenes (alpha and beta) believed by doctors be a key nutrient in minimizing the risk of cancer, specifically of the the lung, esophagus and stomach.
