Ingredients
1/4 cup minced onion
1 tsp unsalted butter or safflower oil
2 tbsp white wine
1/4 cup minced celery
1/4 cup minced carrot
1/4 cup whole-wheat pastry flour
2 cup nonfat milk
1 1/2 cup defatted chicken stock
1/2 cup grated farmer's cheese
1 paprika
1 minced green onions, for garnish
Directions
1. In a heavy stockpot over medium-high heat, saute onion in butter and
wine until soft (about 3 minutes). Add celery and carrot and continue to
cook for 5 minutes.
2. Stir in flour. Lower heat to medium and continue to cook, stirring
frequently, for 2 more minutes. Pour in milk and stock, and bring soup to a
boil.
3. Simmer soup, uncovered, on medium-high heat for 10 minutes. Right before
serving, stir in cheese.
4. Ladle soup into prewarmed bowls and garnish with a dusting of paprika
and a sprinkling of green onions.
Makes 6 cups.
NOTES : Perfect for cold weather, this rich soup combines minced fresh
