Ingredients
6 slice day-old whole-wheat bread
1/3 cup raisins
1 tsp cinnamon
1 tsp nutmeg
1 tbsp canola oil
2 eggs
1/4 cup sugar
2 cup low-fat milk
Directions
Preheat the oven to 350 degrees.
Break the bread into small pieces and place in a nonstick 8- by 8-inch
baking pan. Mix in the raisins, cinnamon, nutmeg, and canola oil.
In a medium bowl, mix the eggs, sugar, and milk. Pour the milk mixture
over the bread pieces in the pan. Set aside for 5 minutes or until the
bread soaks up the milk.
Cover the pan with foil and bake for 30 minutes. Remove the foil and
continue baking for another 30 minutes. Let the pudding cool for 30
minutes before serving.
This recipe yields 10 servings. Serving size: 1 slice.
