Ingredients
2 tbsp cornmeal
2 cup all-purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1 tsp ground cloves
1/2 cup port wine
1/4 cup canola oil
1 egg
2 egg whites
2/3 cup low-fat buttermilk
1 tbsp vanilla extract
3 cup blueberries
Directions
Preheat the oven to 350 F. In a large mixing bowl, combine all the
dry ingredients and set aside.
In a small saucepan, reduce the port over medium heat to 1/4 cup.
Cool to room temperature.
Add the port and remaining ingredients, except the blueberries, to
the dry mixture, one at a time, stirring constantly, until combined
and smooth. Gently fold in the blueberries.
Lightly spray or wipe a 7 x 11-inch glass baking pan with vegetable
oil. Pour the batter into the pan with and bake for 45 minutes, or
until a toothpick inserted in the center comes out clean. Serve warm
from the oven or cool to room temperature.

The South Beach Diet
The South Beach diet is a diet system started by Miami, florida-area cardiologist arthur agatston which stresses that one should consume "good carbs" instead of "bad carbohydrates" and "good fats" instead of "bad fats" Dr. agatston developed the south beach diet for people who have cardiac problems, as a result of his detailed study of scientific studies completed on other weight loss systems. Examples of good foods include, lean beef, turkey breast, fish and shellfish, feta cheese, pistachio nuts, lowfat or nonfat milk and certain vegetables, such as split peas, cauliflower and sprouts. The Glycaemic Index Diet The gi (or glycaemic index) diet is based around the gi index, a chart showing food types and a score representing the speed with which the carbs in the food gets changed to sugar in your system. The theory is that slow acting food types (ie those food types with a low Gi score), keep you feeling full longer and help you to eat less food without craving snacks all the time. It is also very useful for individuals with diabetes, as the low GI foods are beneficial in minimizing surges in blood sugar levels. Superfoods containing carotenes (includes paprika, mangos and tomato puree) These colorful healthy plants have high levels of carotenes (alpha and beta) thought by many play a key role in minimizing the chances of contracting, particularly those cancers involving the esophagus and stomach. The majority of these also help you lose weight, so should be included in your weight loss program. |
