Ingredients
1 cup +2 t. flour
1/2 cup nonfat dry milk powder
1/4 cup brown sugar, firmly packed
2 tsp baking powder
1/4 tsp nutmeg
1/2 tsp baking soda
1 cup +2 t. buttermilk
1 egg, lightly beaten
1/4 cup less 2 t. vegetable oil
2 tbsp sweet whipped butter, melted
1 banana, ripe, mashed
1/2 cup golden raisins, plumped
1 oz walnuts, chopped
Directions
Preheat oven to 400. Spray 12 muffin cups with nonstick spray. In
medium mixing bowl cmbine flour, milk powder, sugar, baking powder,
baking soda and nutmeg; stir to combine and set aside. In small bowl,
combine buttermilk, egg, oil, and butter and stir until blended; stir
in dry ingredients. Add banana, raisins, and walnuts and stir to
combine (mixture will be lumpy). Fill each baking cup with an equal
amount of batter and bake for 15 minutes (until golden brown and a
toothpick inserted in center comes out dry). Transfer muffins from
pan to wire rack and cool. Makes 12 servings, 1 muffin each. One
muffin equals 1/4 protein, 1/2 bread, 1 fat, 1/2 fruit, 1/4 milk, 30

Diet informationThe Glycaemic Index Diet The gi (or glycaemic index) nutrition and weightloss system is linked to the glycaemic index, a chart showing food types and a score illustrating the rapidity with which the carbs of the food type gets transformed to sugar in the dieters bloodstream. The theory is that slow release food types (ie those food types with a low Glycaemic score), suppress your appetite for longer and mean that you can reduce your consumption of food without feeling you are missing out. The South Beach Diet The South Beach diet is a diet system created by Cardiologist arthur agatston which encourages that dieters should be eating "good carbs" instead of "bad carbs" and "good fats" instead of "bad fats" Agatston developed his weight loss system for his cardiac patients, as a result of his detailed analysis of scientific data on other weight loss studies. Approved foods include, broiled ham, turkey breast, prawns, low or fat free cheeses, peanut butter, nonfat milk and some vegatables, such as kidney beans, eggplant and water chestnuts. The Atkins’ Diet Developed by dr. robert atkins in the 1960s, the popular atkins diet achieved most of its fame during the last decade. Although highly controversial, it claims to allow fat reduction but still allows you to eat many foods that are not normally available to dieters, such as meat and egg and cheese. On the atkins diet you eat protein and fat, it is carbohydrates that need to be avoided. Because of this, it is known as a high protein, low carb, nutrition system. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour. On the atkins diet the foods you are encouraged to eat are nutrient-rich unprocessed foods such as meat, fish and, as a consequence, poultry. You also can eat shellfish, regular full fat cheese, butter and, as a consequence, olive oil. The Atkins’ Diet Theory The 'science' behind the popular atkins diet is that even though our bodies use both fats and carbs to change into carbs, it is the carbohydrates that are burned first. If we reduce your intake of carbs, we will use our fat and we will achieve weight loss. This theory is controversial, not all nutritionalists concur and many allege that it might be hazardous. |
