Ingredients
2 lb chicken breast halves
1 without skin -- 4 halves
1 salt
1/2 tsp fresh ground pepper --
1 divided
1/2 tsp paprika -- divided
2 tsp olive oil
1 large green pepper -- chopped
3/4 cup chopped onions
1 1/2 tsp garlic -- minced
1 cup long-grain rice
14 1/2 oz chicken broth, defatted-1 cn
1/3 cup dry white wine
1/8 tsp saffron -- optional
16 oz stewed tomatoes -- or 14.5
1 oz can`
1 tbsp chopped parsley -- fresh
Directions
1. Cut each breast in 2 pieces. Combine 1/4 teaspoon each salt, pepper,
and paprika; rub over chicken.
2. Heat oil over high heat. Add chicken; cook until golden on all sides,
10 minutes. Remove chicken.
3. Add green pepper, onions, and garlic to skillet. Cook, stirring until
vegetables are tender. Add rice; cook, stirring until rice is opaque, 1 to
2 minutes.
4. Stir in broth, white wine, 1/2 teaspoon salt, 1/4 teaspoon each paprika
nd pepper, and the saffron powder. Bring to boil over high heat. Reduce
heat to low; cover and simmer,15 minutes.
5. Stir in chicken and stewed tomatoes with their liquid; return to boil,
breaking up tomatoes with spoon. Cover and simmer 20 minutes more, stirring
once, until chicken and riceare tender and liquid is absorbed. Stir in
parsley. Spoon onto warm platter.

The Atkins’ Diet
First invented by doctor atkins in the sixities, the popular atkins diet is still widely used today. Popular with many famous celebrities, it claims to allow weight reduction whilst allowing you to eat many foods that are not normally available to dieters, such as fatty meat and cheeses. On the atkins diet it is considered good to eat fat and protein, it is carbohydrates that need to be avoided. Because of this, it is known as a low carbohydrate/high protein, weight loss regime. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including, but not limited to, cereals and pasta made from white flour. On the atkins diet the foods you are encouraged to eat are still nutrient-rich unprocessed foods such as meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil. The Atkins’ Diet Theory The logic behind the atkins diet is that if we eat fewer carbs, our bodies will use our stored fat and we will achieve weight loss The Zone Diet The Zone diet is a weight loss program primarily advocated by Barry Sears in a series of books. The Zone diet is not expressly a weight loss diet, nevertheless many followers believe that they really manage to lose a few pounds when following it. The supposed science behind the Zone Diet is that if one can control the secretion of the hormones 'insulin' and 'glucogen', then anti-inflammatory chemicals are released which, in turn puts one's body in a balanced state which is more wholesome than it normally is, which, not surprisingly, is known as 'the zone'. Sears alleges that when your body is in this 'zone' it is much more efficient and, because of this, doesn't build up fat. The most interesting procedure of the zone system is to keep tight control over the precise ratio of carbs to proteins, and to make sure your diet has increased levels of Omega 3 fish oils. Superfoods containing carotenes (includes carrots, rose hip puree and tomato puree) These plants contain alpha-carotene and beta-carotene believed to play a major part in minimizing the risk of cancer, spefically cancer of the esophagus. Most also have a low calorie count, so are ideal for including in your diet system. |
