Ingredients
6 eggs
3 cup fruit spread, apricot
3/4 cup applesauce
3/4 cup butter, softened
2 tbsp extract, vanilla
3 cup flour
2 cup oats
1 tbsp baking powder
3/4 tsp salt
3 3/4 tsp pumpkin pie spice
Directions
Preheat oven to 350. Beat eggs in large bowl. Blend in fruit spread,
butter, applesauce, and vanilla. Add flour, oats, baking powder,
salt, and spices; mix well. Pour into lined muffin tins. Bake 18
minutes, until golden brown.
For bars: Spread dough into greased 12"x8" baking dish. Bake 18
minutes, until golden brown and firm to touch. Cool completely on
wire rack. Cut into bars. Store in tightly covered container.
Nutrition information per bar: 217 calories, 3 gm protein, 28 gm
carbohydrate, 10 gm fat, 62 mg cholesterol, 198 mg sodium, 1 diabetic
starch/bread exchange, 1-1/2 diabetic fat exchange, 1 diabetic fruit
exchange.
Sylvia's comments: The kids at Irene's school loved it -- Irene came
home and asked me to make it again! I think it needs less fruit
spread and less pumpkin pie spice, and next time I'll use applesauce
for all the butter.

Diet typesThe South Beach Diet The South Beach diet is a diet created by Miami-based cardiologist arthur agatston which emphasizes that dieters should eat "good carbs" instead of "bad carbs" and "good fats" instead of "bad fats" Agatston invented his nutritional system as an aid to patients with heart conditions, as a consequence of his analysis of scientific research on other weight loss systems. Good foods include, lean beef, turkey breast, fish, mozzarella cheese, almonds, lowfat or nonfat milk and some vegatables, such as lentils, broccoli and turnips. The Glycaemic Index Diet The gi (or glycaemic index) nutrition system is based on the gi index, a list showing foods and a score representing the speed that the carbs in the food gets transformed to sugar in the dieters system. The believe is that slow acting food types (ie those with a low Glycaemic score), will keep you feeling full for longer and help you to reduce your intake of food without being miserabl;e. It is also especially beneficial for individuals with diabetes, as the low GI types of food are helpful in reducing rises in blood sugar amount. The Zone Diet The Zone diet is a nutrition system primarily invented by Barry Sears in a number of books, publications and an associated web site. The Zone diet isn’t exactly a weight reduction diet, nevertheless many 'zone dieters' find that they really reduce weight by following it. The 'science' claimed for the Zone Diet is that if you can gain control of the secretion of two important hormones, (insulin and glucogen), then your body releases eicosanoids (anti-inflamatory chemicals) which, as a result puts one's body in a state of equilibrium that is much more wholesome than it normally is, this is referred to as 'the zone'. Sears alleges that a body that is in 'the zone' is much more efficient and, as a result, doesn't need to build up stores of fat. The most important procedure of the zone system is to keep tight control over the ratio of carbs to proteins, and to ensure your diet has high levels of Omega 3 fish oils. |
