Ingredients
1/4 cup +2 tb reduced calorie margarine, di, vided
1 brown sugar substitute to =
3/4 cup brown sugar, divided
1 egg
1 3/4 cup all-purpose flour, divided
2 tsp baking powder
1/2 tsp ground allspice
1/4 tsp salt
3/4 cup skim milk
1 cup peeled, finely chopped apple
1 vegetable cooking spray
1/2 tsp ground allspice
Directions
Cream 1/4 cup margarine in a medium bowl; gradually add 1/2 cup brown
sugar substitute, beating at medium speed of an electric mixer until
mixture is light and fluffy. Add egg, and mix well.
Combine 1 1/2 cups flour, baking powder, 1/2 teaspoon ground allspice, and
salt. Add to creamed mixture alternately with skim milk, stirring just
until moistened. Stir in finely chopped apple.
Spoon batter into muffin pans coated with cooking spray, filling
two-thirds full.
Combine remaining 1/4 cup brown sugar substitute, 1/4 cup flour, and 1/2
teaspoon allspice in a small bowl. Cut in remaining 2 Tablespoons
margarine with a pastry blender until mixture resembles coarse meal;
sprinkle evenly over tops of muffins. Bake at 400øF. for 20 minutes or
until lightly browned. Makes 1 dozen muffins.

Carotenoid foods (includes cilantro, mangos and tomato ketchup) These colorful vegetables and fruits are rich in carotenes thought by experts be a key nutrient in helping prevent cancer, spefically cancer of the lung, esophagus and stomach. A good number are also good for weight loss, so you should add them to your diet. Foods rich in flavonoids (inlcudes dark chocolate, apples, scarlet runner bean & coriander) The nutrients called 'flavonoids' present in these fruit, vegetables and pulses are believed to have properties as cancer fighters. Medical experts who have been studying the nutritional effects of flavonoids think that they also have numerous other health benefits, including, but not limited to, anti-candida and antioxidant capabilities. A good number are low in calories, so are ideal for including in your diet. The Atkins’ Diet Originating way back in the 1960s, the famous atkins diet achieved most of its fame during the last few years. Although highly controversial, it supposedly allows fat reduction whilst still eating many foods that would not be part of a normal diet, for example lamb and hard cheese. Unlike other diets, on the atkins diet you are supposed to eat fat and protein, it is the carbs that are on the banned list. Because of this, it is known as a low carb/high protein, weight loss program. With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, amongst them, cereals and pasta made from white flour. With the atkins diet the foods you are encouraged to eat are still nutrient-rich unprocessed foods such as meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil. |
