Ingredients
4 medium sweet potatoes
1 vegetable oil cooking spray
1 tbsp margarine
1/4 cup orange juice
2 tbsp chopped walnuts
1/4 tsp nutmeg
Directions
Cook whole sweet potatoes in boiling water 25 to 30 minutes or until
tender. Meanwhile, lighly spray a 1-quart casserole dish with cooking
spray.
Remove potatoes from heat and add cold water until they are cooled
slightly. Drain, peel and mash the potatoes. Add remaining ingredients and
mix thoroughly. Place in casserole dish and bake, uncovered, at 375 degrees
F. for 25 minutes. Serve hot. Makes 6 servings.

"good" foods include, veal cutlets, chicken breast, oysters, low or fat free cheeses, pistachios, nonfat milk and some vegatables, like butter beans, eggplant and turnips. |
